I. Aerohot Proofer/Oven Gold Specification Operating
Instructions
Description
:
The Aerohot Proofer/Oven Gold Specification is equipped with a Digital Electronic Control that is
fully programmable for up to five product presets to allow “one-touch” operation. The Proofer/Oven
may also be operated manually without entering the programming mode. Attaching the Aerohot
Proofer/Oven to a cold water line provides water for proofer humidity.
Controls:
Energizes the Digital Electronic
Control and provides circuit breaker protection for the
Proofer/Oven circuits.
2. Oven Switch
Activates the oven portion
of the
Digital Electronic Control and energizes the oven fan.
3. Proofer Switch

Activates the proofer portion of the
Digital Electronic Control and energizes the proofer fan.
4. Oven Digital Display
Provides LED display of oven
time and temperature.

8. Oven + Actual

Pushbutton
Pressing the “+” or “
-
increases or decreases the displayed time or temperature
setting for the oven. Holding a pushbutton down changes
the values more rapidly. Simultaneously pressing and
holding the “+” and “-“ displays the actual oven
temperature for three seconds.
5. Oven S1 and S2 Time and Temp Lights
Indicates
what display is present on the Oven Digital Display. S1
time and temp lights are lighted when Step 1 time or
temperature is displayed. S2 time and temp lights are
lighted when Step 2 time or temperature is displayed.
6. Oven Select Pushbutton
Switches the Oven
Digital
Display between time and temp. Also, when held for three
seconds, switches the displayed time and temperature
between Step 1 (S1) and Step 2 (S2).
9. Programmable Preset Pushbuttons
Provide fully
programmable presets for both the oven and proofer.
7. Oven Heat Light
Illuminates when the oven heat
elements are energized.

11. Oven Run/Pause Pushbutton
Controls the oven
timer. When pressed and held for three seconds, it sets
the displayed time remaining to 0:00.

Indicates what display is present on the Proofer Digital
Display. S1 time temp and Hum lights are lighted when

temperature or Humidity is displayed.
14. Proofer Select Pushbutton
Switches the Proofer
Digital Display between time and temp. Also, when held
for three seconds, switches the set of active programmed
presets between S1 and S2.

temperature, or humidity setting for the proofer. Holding a
pushbutton down changes the values more rapidly.

10. Oven Cool Down Pushbutton
Turns on the oven
fan with
out turning on the heat elements to allow the oven
to cool before cleaning.

Illuminates when the proofer
heat elements are energized.

Manual Proofer Operation:
Ensure the main power switch is on, turn the proofer switch on.
Press the Proofer Select Pushbutton until the S1 LIGHT next to TEMP is illuminated.
Use the “+” or “-” pushbuttons to adjust the proofer heat to the desired temperature. A good
starting temperature is 105°F. The Proofer Heat LIGHT will illuminate until the proofer has
heated to the set temperature.
Press the Proofer Select Pushbutton until the S1 LIGHT next to Time is illuminated. Use the “+”
or “-” pushbutton to adjust the timer to the required time. You may need to adjust the time
depending on the type of dough and your desired results.
Press the Proofer Select Pushbutton until the S1 LIGHT next to Hum is illuminated. Use the “+”
or “-” pushbutton to adjust the proofer humidity to 5. You may need to adjust this setting
depending on your results.
Allow the proofer to heat to the desired temperature, usually about 20 minutes. When the
proofer is heated, the Proofer Heat Light will go out.
Load the proofer with the bread dough. Since the proofer can hold more pans of bread than the
oven can bake, stagger the loading in increments of the oven bake time. This will prevent the
over-proofing of the bread remaining in the proofer after the first load is moved to the oven.
Press one of the load timer pushbuttons then press the Run/Pause Pushbutton. This starts the
proofer humidity and the clock.
If additional loads are to be proofed, load the proofer, select a different load timer pushbutton,
and then press the Run/Pause pushbutton. The load timer pushbutton that has the least time
remaining will flash and the proofer digital display will show that time remaining. Pressing one
of the other load timer pushbuttons during proofing displays the time remaining for that timer
for three seconds then the display changes back to show the shortest time.

18. Proofer Cool Down Pushbutton
Turns on the
proofer fan without turning on the heat elements to allow
the proofer to cool and dry out before cleaning.
19. Proofer Run/Pause Pushbutton
Controls the
proofer timer. Also, when pressed and held for three
seconds, resets the time remaining to 00:00.

The proofer time may be cancelled by pressing and holding the Run/Pause Pushbutton. This
resets the displayed timer to 00:00.
The alarm will sound as each timer reaches 0:00. Press any button to silence the alarm.
When a light fog appears on the door glass, the proofer humidity setting is correct. The humidity setting is
too high if water is running down the door glass. If the door glass does not fog, then the humidity setting is
too low. If the proofer humidity is incorrect, press the Proofer Select Pushbutton until the S1 LIGHT next to
Hum is illuminated. Use the “+” or “-” pushbutton to adjust the proofer humidity as required.
Make sure the dough is properly thawed and retarded before loading it into the proofer. The dough should
be soft and moist with the center thawed. Do not let the dough dry out while it is thawing.
NOTE: Excessive proofing will cause the bread to collapse after it has been baked. Make sure to
adjust the proofing time to prevent over-proofing. If the bread is under proofed, it will not bake to
the proper finished size and will have a dense cell structure. Watch the proofing process carefully
and make adjustments if necessary.
Managers Note:
If the product that you are baking requires that the oven temperature be changed part
way through baking, press and hold the Oven Select pushbutton until the S2 light next to Time turns on.
Repeat the step for setting the Step 1 (S1) time, temperature, and humidity settings. When the S1 settings
are finished running, the S2 settings will start.
Manual Oven Operation:
Ensure the main power switch is on, turn the oven switch on.
Press the oven Select Pushbutton until the S1 LIGHT next to TEMP is illuminated.
Use the “+” or “-” pushbuttons to adjust the oven heat to desired temperature (normally 350°F
for bread and deli rolls). The oven takes from 20 to 30 minutes to preheat. The oven heat light
is on when the oven is heating. When the oven is heated, the oven heat light will turn off. The
oven door must be closed for the oven to heat.
Press the Oven Select Pushbutton until the S1 light next to Time is illuminated. Use the “+” or
“-” pushbutton to adjust the timer (normally 18 minutes for bread or 14 minutes for deli-rolls).
When the oven is ready, load the oven and press the Run/Pause pushbutton.
The oven time may be cancelled by pressing and holding the Run/Pause Pushbutton. This
resets the timer to 00:00.
When the timer reaches 0:00, the alarm will sound.
When baking bread, if the bread is too dark, reduce the bake time. If the bake time is reduced 2 minutes
and bread is still too dark, then reduce the temperature 15°F and try baking again.
The same procedure can be used to bake deli rolls. If the rolls are too dark after reducing the bake time 2
minutes, then reduce the temperature 15°F and try baking again.
Managers Note: If the product that you are baking requires that the oven temperature be changed part
way through baking, press and hold the Oven Select pushbutton until the S2 light next to Time turns on.

Repeat the step for setting the Step 1 (S1) time and temperature settings. When the S1 settings are
complete, the S2 settings will start.
Oven/Proofer Programming
When you are satisfied with your proofer and oven settings, they may be permanently stored under the
programmable preset buttons using the following procedure:
Set the Oven/Proofer temp, time, and humidity as desired.
Press and hold one of the programmable preset pushbuttons until you hear a tone.
Release the pushbutton. Your settings are stored under that preset pushbutton.
Programmed Proofer Operation:
Ensure the main power switch is on, turn the proofer switch on.
Press the programmable preset pushbutton where the product proofer/oven setting are stored.
This starts the proofer humidity.
Allow the proofer to heat to the desired temperature, usually about 20 minutes. When the
proofer is heated, the alarm indicates that the proofer is ready to load and the display reads
“RDY”.
Load the proofer with the required product dough.
Press one of the load timer pushbuttons and then press the Run/Pause Pushbutton. This starts
the proofer clock.
If additional loads are to be proofed, load the proofer, select a different load timer pushbutton,
and then press the Run/Pause pushbutton. The proofer digital display will show the time
remaining for whichever load timer pushbutton is illuminated.
The proofer program may be cancelled by pressing and holding the Run/Pause Pushbutton.
This resets the timer to 00:00.
The alarm will sound and the display will read “DONE” as each timer reaches 0:00. Press any
button to silence the alarm.

be soft and moist with the center thawed. Do not let the dough dry out while it is thawing.
Programmed Oven Operation:
Ensure the main power switch is on, turn the oven switch on.
Press the programmable preset pushbutton where the product proofer/oven setting are stored.
The oven takes from 20 to 30 minutes to preheat. The oven door must be closed. The oven
will not heat when the door is open. When the oven is heated, the alarm indicates that the oven
is ready to load.
When the alarm indicates that the oven is ready, load the oven with 6 pans of bread and press
the Run/Pause pushbutton.
The oven time may be cancelled by pressing and holding the Run/Pause Pushbutton. This
resets the timer to 00:00.

When the timer reaches 00:00, the alarm will sound and the display will read “DONE”. Press
any button to silence the alarm.
II. Cleaning
At the end the day, open the oven and proofer door and press the cool down pushbutton for each. This
allows the proofer and oven fans to run without the heat active. Once the oven and proofer have cooled,
remove racks for cleaning. Leave proofer fan operating long enough to remove the moisture from the
cabinet. Clean the oven and proofer interior using mild detergent and warm water. After cleaning, leave the
proofer and oven doors ajar to extend the life of the door gaskets and to allow air to circulate throughout the
proofer and oven cabinets.
NOTE: Do not use scouring pads on the metal finish. Rinse with clear water and wipe dry with a
soft cloth. Window cleaner may be used to clean door glass, inside and out. NEVER steam clean
unit. Steam moisture will migrate into the electronic components and wiring insulation causing
serious damage.
