Initial Inspection
The AUTOFRY Model MTI-40E has been packaged to withstand rugged travel;
however, in the event of damage you must notify the shipping company.
Remove and save all packaging materials
Inspect for the following components.
1. Two wire food baskets
One left side
One right side
2. Two food service baskets
3. Charcoal filter
4. Male quick-disconnect
(Gas Models Only)
Consult the operator's manual for
component installation.
The optional Oil Filtration /
Disposal System and its
components include the

Installation Instructions:
Licensed trades-man in accordance with all local and national codes must install
electrical service. Motion Technology, Inc. will not assume responsibility for any
injuries or equipment malfunctions resulting from non-conforming installations.
Motion Technology, Inc. is not responsible for Local requirements that additional
equipment and/or appliances may be required for a food preparation area in a
store, which may include but not be limited to Type II Hood, Vent Fan, Grease
Interceptors and Additional Sinks. Check with your local building or health
departments for specific requirements.
Selecting a Location
The location of the AUTOFRY must be level.
Adequate space must be provided so that the AUTOFRY can be moved forward
for service without interference.
Adequate exhaust or replacement air ventilation must be supplied (200 cfm) if not
already provided by other means.

Inspect and Install Components
1. The following components have been supplied with the AUTOFRY (See
Figure 4).
Two wire food baskets.
Two food service baskets
The charcoal filter.
The round fryer brush.
Wash the two wire food baskets
and the two food service baskets
in warm soapy water followed by a
clear water rinse
CAUTION
Never soak the charcoal filter. Wipe down the exterior surfaces
with a damp cloth.

2. Install charcoal filter (See Figure 5A & 5B).
Loosen and remove the two black plastic knobs securing the filter cover plate
by rotating them counter-clockwise.
Remove the charcoal filter from its plastic bag.
Insert the charcoal filter into the tracks above the grease baffle.
Re-install the filter cover plate.
Important Notes:
The AUTOFRY is equipped with a series of safeties. If any of the filters or
filter cover plate are not installed or installed incorrectly the AUTOFRY will
display Sft at the keypad. All filter components must be installed in order for
the AUTOFRYto operate.
The charcoal filter must be maintained on a regular basis in order for the
AUTOFRY to maintain its listing as a Ventless Cooking Appliance. Filter
maintenance and regular cleaning is an important part of your regular
maintenance. Consult the cleaning and maintenance section of this manual for
the frequency of filter changing.

3. Open the lower cabinet doors and install the oil filtration system
(See Figure 6).
Ensure that both the oil vat drain valves are in the closed position (See
figure 6).
Ensure that the ON/OFF switch is in the OFF position.
Plug the filtration system into the switched outlet.
Roll the oil filtration system into position under the drain valves by lifting
the two splashguards up. The splashguards will fit through the two round
cutouts in the filtration cover.
CAUTION
Do not press the ON key until all interior components have been installed
and oil has been added.
RISK OF FIRE
There is risk of fire due to low oil or no oil situation. Ensure there is oil in both oil
vats prior to pressing the ON keys.

Basket Installations
There are two wire food baskets, one for the left side oil vat and one for the
right side oil vat. When installed the wire food baskets will sit level in the oil
vat.
1. Install the square end of the basket rod into the slot in the basket cam
(SeeFigure 7).
2. Lower the round end of the basket rod into the receiver clip located just
inside the cook chamber (See Figure 8A & 8B).

Add Liquid Shortening and Fry Compound
CAUTION
Never use solid shortening as it will solidify in the oil return lines
and cause damage to the basket lift motors. The AUTOFRY Model
MTI-40E has been designed to operate at peak performance with the use of liquid
vegetable shortening.
CAUTION
There is risk of burns from hot oil; always keep the main door locked. Always wear
protective clothing and eye protection when hot oil is present.
1. With the oil drain valves in the closed position and the oil filtration or oil drain
pan in place fill the oil vats to the lower fill line (1

" below the center vat divider).

2. Add one 2 oz. package of Fry Compound to each vat.
Fry Compound will allow you to cook at a lower temperature and will extend
the life of your shortening as well as enhance the appearance and taste of your
product.
To order additional Fry Compound call 1-800-332-9565 and order part
number FC 25-2.
RISK OF FIRE
There is risk of fire due to a low oil condition. Always ensure that there is oil in the oil vats
before pressing the ON keys.

Install Food Service Baskets
There are two food service baskets that will be installed into the food exit areas at
the front of the AUTOFRY (See Figures 10A & 10B). To install these baskets slide
them into the exit area then lift the baskets up and hang them on the lip at the back of
the exit area.

Starting The AUTOFRY
1. Close and lock the main door
2. Press the ON key at the keypad.
The left side keypad controls the left side oil vat.
The right side keypad controls the right side oil vat.
If the oil fails to heat within 2 Minutes, Press the OFF key, wait ten seconds then
repeat. If the display ready A05, Press the OFF key then repeat.
If the display reads Sft, Press the OFF key. Ensure that all filters and the filter
cover plate have been installed. Ensure that the exhaust vent, located at the top of
the AUTOFRYis not blocked.
During Start-Up
The display at the keypads will read current oil temperature and the RED
°WAIT light will be illuminated.
The exhaust blowers will run as long as oil temperature is at or above 120°
Gradually the oil will heat to the ready temperature. This will take
approximately 10 minutes.
At 340 degrees the GREEN °READY light will illuminate; however, it is
advisable to wait until the oil temperature has reached 350° F before cooking.
Start-Up Hints:
The AUTOFRY Model MTI-40E has a large cold zone. The cold zone
functions to extend oil life and prevent food particles from burning should they
fall below the food baskets.
During initial start-up with new shortening you may want to shut the
AUTOFRY OFF and drain and filter the oil to "stir" the oil in the cold zone.
If the oil is not drained and filtered there may be some oil temperature
"Recovery" during the first 5-10 cook-cycles.
The AUTOFRY Model MTI-40E is equipped with automatic re-set high limit
thermostats. These thermostats may trip during start-up if the display reads
A05 or A08, simply press the OFF button at both keypads, drain and filter the
oil.
The thermostats must cool 50 degrees to re-set. By filtering the oil you
will allow the thermostats to air cool.
Re-start the AUTOFRY by pressing the ON button.

Begin Cooking
WARNING
Always wait for the GREE READY LIGHT before entering product!
Cooking with the AUTOFRY is as simple as 1,2,3
Enter a cook time by pushing buttons 0-9 on the keypad. For
example, to cook for 2 minutes and 30 seconds:
Push 2,3, and 0.
The display will read 230.
If you enter the wrong time press CLEAR and re-enter your cook
time. Most food products will have recommended cook times
printed on their packaging; use these cook times as a base line
starting point.
Open the food entry door and place the food product to prepare in the
food chute.
CAUTION! Always wait for the GREEN READY LIGHT before
entering food!
Close the food chute and push the START button.
During Cooking
The 0 READY light has gone out and the O WAIT light will illuminate.
The display will count down the selected cook time.
The wire food basket now contains the food. " At the end of the COOK
CYCLE oil temperature replaces time at the
display. The wire food basket will be raised out of the oil pot and drain
the food product for 12 seconds.
At the conclusion of the DRAIN CYCLE the wire food basket will
dispense the food into the food service basket. You may hear the sound
of the wire food basket hitting the sidewall. This is a normal condition.
The DISPENSE CYCLE is repeated once to ensure that all the food has
been emptied from the wire food basket.
The wire food basket will return to the ready position, the O WAIT light will
go out and the 0 READY light will illuminate. A quick "beeping" sound will
occur to signal that the AUTOFRY is ready for the next order.

AUTOFRY Shutoff Procedure
Push OFF.
The keypad display will shut off immediately and the oil will begin to
cool.
The AUTOFRY is safely shut off.
The oil will remain hot for a long period. To assure continuous air
cleaning, the fan will continue to run for about 2 hours or until the oil
temperature falls below 190° F.

Additional KEYPAD Functions The
Count Button
The COUNT button tracks equipment cycles and this function can be utilized to
record sales and control inventory. There are two count features: a daily re-
settable count and a total cumulative count. To COUNT follow this procedure:
Press COUNT twice to determine the cumulative count of cook
cycles performed by the AUTOFRY.
A display of up to two sets of three number will appear on the
keypad:
From 0-999 total COOK CYCLES, the keypad will display
ONE set of THREE numbers.
examples:
1. 030 = 30 total cook cycles
2. 302 = 302 total cook cycles
3. 999 = 999 total cook cycles
At 1,000 total cook cycles and up to 9,999 the keypad
will display TWO sets of THREE numbers.
examples:
1. 001 followed by 002 = 1,002 total cook cycles
2. 006 followed by 001 = 6,001 Total cook cycles
After 6, 999 total cook cycles the counter will return to 000.
Re-settable Count
To access this re-settable count feature simply press the COUNT button once to
view the re-settable count. While the count is on the display press the CLEAR
button to clear the count. By pressing the COUNT button twice you can view the
total non-re-settable count.

The Stand-By Button
The Button is used during off-peak hours to conserve energy and
maximize oil life.
To Activate Stand-By Mode
For all AUTOFRY models, press the button and the O STAND BY
light will illuminate.
The elements shuts off until the oil temperature drops below 300° F and then
maintains this temperature.
To Exit Stand-By Mode
Press the CLEAR button
The O STAND BY light will go out and the oil will begin to heat up until it reaches
the READY temperature.
Never shut-off the AUTOFRY while in the Stand-By mode as
the keypad may remain locked in the Stand-By mode! If this
should happen when you re-start the AUTOFRY simply
press the key a second time or press the CLEAR
button.
Repeat Cook Time
Use the following procedure to repeat the last entered cook time:
Simply press START and your last cook time will be repeated. This may
be useful if you have a single product menu or multi-product menu with
identical cook times.
Maximum Cook Time
The AUTOFRY has maximum cook time of 15 minute and 59 seconds.

Programming Cook Times
The AUTOFRY offers you the ability to program the 1 - 6 keys for your most
common cook times.
It is a good idea to write down your six most commonly used cook times prior to
programming the AUTOFRY. Instructions for programming are as follows:
Entering the programming mode.
1. Press the OFF Button.
2. Simultaneously press the 2 and 0 buttons.
The display will read P =
3. Press the 2 button three times, then press START.
The display will read 001.
Key #1
1. Press the 1 key to view or edit the pre-set cook time.
The display will read 1:00.
2. Press the 2 key to increase the cook time or press the 3 key to decrease the
cook time.
3. Press the 1 key to save the changes.
The display will return to 001.
If you do not wish to continue re-programming the other 5 buttons simply press the
OFF button. Otherwise, with the display reading 001 follow these instructions:
Key # 2
1. Press the 2 button.
The display will read 002.
2. Press the 1 button to view or edit the pre-set cook time.
The display will read 2:00.
3. Press the 2 key to increase the cook time or press the 3 key to decrease the
cook time.
4. Press the 1 button to save the changes.
The display will return to 002.
If you do not wish to continue re-programming the other 4 buttons simply press the
OFF button. Otherwise, with the display reading 002 follow these instructions:

The display will read 4:00.
3. Press the 2 key to increase the cook time or press the 3 key to decrease the
cook time.
4. Press the 1 button to save the changes.
The display will read 004.
If you do not wish to continue re-programming the other 2 buttons simply press the
OFF button. Otherwise, with the display reading 004 follow these instructions:
Key # 5
1. Press the 2 button.
The display will read 005.
2. Press the 1 button to view or edit the pre-set cook time.
The display will read 5:00.
3. Press the 2 key to increase the cook time or press the 3 key to decrease the
cook time.
4. Press the 1 button to save the changes.
The display will read 005.
If you do not wish to continue re-programming the last button simply press the
OFF button. Otherwise, with the display reading 005 follow these instructions:

Exit programming mode
To exit the programming mode press the OFF key. You have now preprogrammed
your AUTOFRY for optimum convenience and performance.
Using the pre-programmed times
To use the pre-programmed keys simply press the 1- 6 key. The display will show 001-
006. Place the selected food into the food entry chute, close the entry chute door and
press the START key. The display will count down the pre-programmed time.
