The
perfect cooking experience starts with filling your hopper with allnatural, 100% hardwood BBQ pellets.We

PushingtheON Buttonactivatesthe “ElectronicIgniter”,thecombustionfan, andtheauger.The augerfeedsthe
wood pellets from the hopper onto the burn pot,
where they are ignited usi ng superheated air. TheIntelligent
Temperature Control allows you to set the cooking method and desired temperature, and will adjust for ambient

InitialBurnOff
Before cooking for the first time, we recommend thatyou“burn off” the grill to rid it of any
foreign matter used in the manufacturing process. Prior to burnoff, completely remove the
plastic film on all stainless steel surfaces.Failure to do so will cause the
film to melt to the
metal,anditwillbeextremelydifficulttoremove.Removethecookinggratesandwashwitha
mild soapordetergent.Withthegratesremoved,lightandoperate the grill at 450F (in cook
mode) with the hood down for 20 minutes. After burnoff, turn
the grill OFF and replace the
grates.
LightingyourGrill
ItisrecommendedpracticetogothroughthePeriodicGrillMaintenance(pg.10)procedures
frequently.Thiswillensureproperignitionofthepelletsandispartofthenormalmaintenance

HoodPosition
Alwayscookwiththehoodclosed.Cookingwiththehoodclosedkeepsthetemperatureeven,
cooking the food faster while using
less fuel. A closed hood also helps to create a smokier
flavor.Ifthehoodisleftopen foran extendedperiodoftime,itwillcausetheITCtoincreas e
the fuel feed rate in an effort to increase the grill temperature.This could result in an
overloadedburnpot.

Insteadoffrequent,visual checksof yourfood, theuseofanelectronicmeatthermometeris
recommended.Thewiredversionofthistoolcanberoutedthroughthe5/16” holeintheside
of the Memphis Select or Advantage, or under the hood gasket on the Pro or BuiltIn

Priortostartingyourcookingcenter,inspecttheburnareainside thegrillingarea.It'sarecommendedpractice
to go through this procedure at initial start up and after every few uses to ensure peak performance. Actual
necessaryfrequencyvariesdependingonusageandfueltype.
1. Openthehoodandremovethecookinggrates.
2. Removetheflavorizerandflamedeflector.Theflamedeflectorhelpsdistributeheat,containsflyash,and
keepstheflamefrommakingdirectcontactwithcookinggrids.
3. Ifnecessary,checktheburnpotarea,removeanyforeignitemstoensurethattheairholesinthegrateare
clear.This will allow a quicker and more efficient ignition.Take precautions not to damage the igniter
wiringconnectionsorpulltheigniteroutoftheignitertube.
4. Reinstalltheflavorizer/flamedeflector.
5. Reinstallthecookinggrates.
6. Openthepellethopperlid,foundatthefrontofyourgrillontheSelectandAdvantage,oratthebackofthe
Pro.Checkforanyforeignobjects
7. Fillyourhopperwithcookingpelletfuel.Closethehopperlid.
8. PlugyourMemphisWoodFiredConvectionGrillinto thenearest110VoltACoutlet.(Note:UseaGFI

5.Tooperate:OncetheConvectionGrillhasstarted,operateasfollows;
UPreHeat:UThisisthebeginningstageofcookingorsmokinginwhichthefuelisignited,andthegrillis
broughttothesettemperatureasquicklyaspossible.Youmaynoticeinthisstagethat,initially,the
augerwillfeedfuelalmostconstantly.Thisistoprimetheburnpot
sothatitisabletomaintain
significantheat.WhenthisisconcludedtheITCwillthentakecontroloverthefuel,feedingthefir e
preciselyoverthedrastictemperaturechangefromambienttoyourcookingorsmokingsetpoint.The
durationofthisstagewillvarysomewhatduetodiffering
ambientconditions,settemperatures,and
grillmodels.Inmostcases,thegrillwillbeinthepreheatstageforsomewherebetween15and25

Flavored pellets come in a variety of flavors such as Mesquite, Alder,
Apple, Hickory, Maple and Cherry. They contain approximately 8,200
BTU’sofheat perpoundandhave verylittleashand moisture content.
AlwaysusePremiumBBQPelletsinyourgrill.PremiumBBQpelletshave
a maximum length of 1.5”.
This shorter length ensures a higher
efficiencyandamoreconsistent, uniformtemperature.Pre miumpellets
are made of 100% hardwood.Cooking with pellets made from soft
woods, such as pine, should be avoided, as it yields a turpentinelike
taste.
Wood pellets have been in
existence for many years,
and
there are currently
more than 125 active pellet
milloperationsintheUnited
States and Canada,
producing millions of pounds of pellet each year. "Natures Way"
100% hardwood BBQ pellets are produced in the samemanner as
wood pellet heating fuel is produced. Sawdust and clean wood
chipsarepulverized
anddried.Thedriedmaterialisthenprocessed
under heat and pressure. This material is forced through a hard
steeldierotatingagainstrollerswithpressureover3,000PSI.Once
the pellets are forced through the final die they are cooled,
screened, vacuumed, and then bagged or boxed. No extra adhesives
or bonding materials are used in the
production of these pellets.Hardwoods contain naturallyoccurring compounds called “lignins” that, when

StainlessSteelWorkingSurfaces
ALWAYS clean dirt and dust off all stainless steel sur
facesbeforeyoubeginto cook.Thedirtcan cookinto
the metal and discolor it. Dirt can be easily cleaned
with hot, soapy water and a softcloth. Therearealso
manycommercialproductsmadeto
cleanandprotect
yourstainlesssteelsurfaces.
PaintedSurfaces
Your painted surfaces have a very durable high temp
powder coat finish.The surfaces can be cleaned with
mildsoapandwaterandwipedwithasoftrag.
Flavorizer
It is recommended that you remove any build up of
food or grease from the flavorizer before every cook.
A clean flavorizer further reduces flare ups.Brush or
scrape any build up off of the flavorizer with a grill
brushorputtyknife.Nevercleantheflavorizerwhileit
ishot.

GreaseTray(s)
Alwaysbesure thegreasepull out
pansare cleanand
free of debri s. During the warmer months empty any
grease buildup on a more frequent basis to keep it
fromgoingrancid.
BurnPotandIgniter
Periodically check the air holes found in the burn pot
for any blockages or buildups. Using a wire
brush,
scrapeoffanybuilduporblockage.Whenreinstalling,
confirm the proper positioning in the burn pot. The
burn pot should be level from side to side and from
fronttobackandshould have asnugbut nottightfit.
Youwill also wanttovisuallycheckthe
airholesinthe
igniter tube. Clean any debris or blockage out of both
areastoensureaperfectstart.
RTD
Yourgrill’sabilitytoaccuratelysensetemperature
andadjustitsperformanceaccordinglyiswhatmakes
ituniqueandvaluable.TheRTD,atemperaturesen
sorlocatedtowardstherearof
thecookingarea
shouldbewipeddownwithwaterandmilddetergent
toensureproperperformance.
GrillInterior
Though BBQ pellets burn efficiently, they do create
some amount of ash.Though the grill’s interior walls
and floor need not be spotless, periodically clearing
outaccumulatedashisagoodpractice.
Airbox
Because the Airbox is used to channel the fanforced
airintotheburnpot,thereisverylittlemaintenanceto
bedoneinthisarea.Occasionally,youmayeithervac
uum or brush out any buildup of ash or burn debris
thathasfallenbelow the burn
pot.Removeanyaccu
mulationofgreaseordebrisontheinsidesurfaces.
GrillCover
We recommend that you cover your Memphis Grill
when not in use.Ensure that your grill is completely
offandcooledbeforecovering.

 Smokinginthe225°to275°Ftemperaturerangeisthegenerallyacceptedmethodformostmeats.....The
possibleexceptionwouldbesomefish......Notonlydoyougetgreatresultsatthesetemperatures,butit
takesashorteramountoftime.
 Ifyouwishtosmokeatlowertemperatures theMemphisProiscalibratedtoallowyoutogoaslowas180°.
Whensmokingatthelowertemperaturesit’scriticalthatyouuseapremiumfoodgradepelletsuchas
NaturesWayflavoredBBQPellets.Nature’sWaypremiumpelletsarespecially
