We congratulate you on your great choice, and we thank you and invite you to read this manual to use this
machine with no risks and hazards.
While reading this manual you will have the opportunity to get the hang of your new machine, and appreciate
all the production advantages. You will discover that this machine is very easy to use, and you will learn how
you can easily change the processing product, optimising your own production by making it even more profitable.
You will learn how applied technology can help you in your business. In fact, the machines manufactured by
TELME S.p.A. are the fruits of synthesis of years of experience in the designing and manufacturing of machines
for processing food products.
Quality is the hallmark of all our machines, and it renders them cost-effective, reliable, easy to use, noiseless,
safe and ergonomic, requiring reduced maintenance.
In order to maintain machines in perfect working order, it is imperative that the simple maintenance operations
described herein be carried out.
Cleaning the machines is essential and necessary to maintain their reliability.
The manufacturer – in order to provide manuals even more thorough and comprehensive – asks for the precious
collaboration of the users who can send their remarks or corrections stemming from their direct experience.
For the safety of operators and the integrity of the machine, it is strictly forbidden to change the use or change
any design parameter, device or protection system to avoid voidance and cancellation of warranty.
The manufacturer shall not be liable in case of change of use, in the event of replacement with non-original
parts, improper use, tempering, mistreatment, lack of maintenance, removal of safety devices and, in general,
of any changes made to the design parameters.
A highly qualified service system is always at your disposal for any technical request.
Do not try to solve any technical problems you may have on your own to avoid incurring severe dangers;
contact your seller.

1 TEST, WARRANTY AND LIABILITY
PLEASE READ THESE INSTRUCTIONS BEFORE ATTEMPTING TO INSTALL AND OPERATE YOUR
MACHINE.
THIS MANUAL PROVIDES ALL INFORMATION REQUIRED TO INSTALL, OPERATE AND MAINTAIN
MACHINE
UNDER SAFE CONDITIONS. FAILURE TO COMPLY WITH THE SAFETY MEASURES
SET
OUT IN THIS HANDBOOK MAY RESULT IN SERIOUS DAMAGE TO THE MACHINE AS WELL
AS FORFEIT ANY MANUFACTURER'S GUARANTEE.
1.1 Teechnical documentation
Test
The whole machine is sent to the customer and prepared to be installed after having passed all the tests and inspections laid
down by the manufacturer in compliance with the regulations in force.
Warranty
TELME warrants sold machines for a time of 12 months from delivery date. During the time of warranty, TELME will replace,
free ex-factory, all parts damaged for evident defects of manufacturing or for a bad quality of the materials. Replaced parts
still belong to TELME and will have to be returned to the head office free of charge. Labour and eventual travelling expenses
will be at purchasers charge. Freon gas filling is excluded from the warranty. The warranty declines if the machine is used
not in conformity with the sales instructions; it they are damaged willingly or unintentionally; if the machine is modified,
repaired or disassembled by not authorized staff. The warranty also declines if the connections, power an water, for the
feeding of the machine (at purchasers charge) are uncorrect. Suspension of payment, agreed in the sales proposal and
accepted by TELME will cause the suspension of warranty.
Additional warranty
TELME warrants sold machines according to above mentioned conditions for a time of 12 months from delivery date. In
order to acquire the right of having the additional warranty of 1 year, so that the warranty is extended to a total time of 24
months, the buyer has to cut out, fill in, sign and send back, by registered letter, to TELME, within 15 days from date of
installation, the warranty card which is enclosed in the manual “OPERATING INSTRUCTIONS”. If TELME doesn’t receive
the warranty card, the additional warranty time will not be acknowledged.
Responsibility
TELME is free from every responsibility and obligation for any further accident to people and goods that could verify for
and/or during the use, for reasons or/in dependence on supplied machines, during eventual testing and even if accident is
due to defects of manufacturing or materials. Any further claims of reimbursement must be considered excluded.Products
cannot be used for intent different to that indicated.
1.2 Environmental conditions
The machine working environmental conditions must follow the indications reported below:
Temperature +2°C ÷ +35°C (35.6°F ÷ 95°F)
Humidity 10% ÷ 95% (not condensed)
THE MACHINE MUST BE PLACED IN A PLACE SHELTERED FROM RAIN.
Environmental conditions differing from the ones speci?ed herein may cause serious damages to the machine, in particular
to the electrical equipment and the refrigeration system.
PLACING THE MACHINE IN PLACES DIFFERENT FROM THE ONES DESCRIBED HEREIN
CANCELS AND VOIDS THE WARRANTY.
The storage of machine when not working allows temperature to range between +2°C (+35,6°F) and +60°C (140°F), it
being understood all the other precautions.
IT IS STRICTLY FORBIDDEN TO USE THE MACHINE IN PRESENCE OF EXPLOSIVE
ATMOSPHERE OR FIRE HAZARD.

1.3 Intervention request – technical assistance
Every intervention request to the Customer Technical Service must be submitted via fax or email to the retailer where the
machine was purchased. The sell/assistance net of the manufacturer can be consulted on the internet site www.telme.it.
In the intervention request or technical assistance the following shall be specified:
1. type of machine, serial number and year of installation;
2. defects noticed;
3. retailer where the machine was purchased;
4. fiscal document bearing witness to the date of purchase by the user.
1.4 How to order spare parts
To request spare parts, please contact your local main dealer or consult the updated list of the authorized service centers
through TELME official website.
1. Press “TELME DEALERS” (A) key from the main website page.
2. The system displays the page where the updated list of dealers can be found and consulted.
1.5 Marking
All identification data of the machine are engraved on its rating plate placed on the back of the machine. Such data shall
have to appear always on every document exchanged between the user and the manufacturer, e.g. upon every assistance
request or when requesting spare parts, etc…
The following ID plate is placed on the machines.
The technical data plate and CE marking must not be removed. It is located on the back part of the device and identifies:
- the name and address of the manufacturer [F];
- the machine code [CODE], the designation of the model [MOD] and the relative series number [S/N];
- the type and quantity of freezing gas contained [GAS];
- the year of construction [ANNO];
- the values of voltage and frequency [V], and the power [Hz] and current [Ph] consumption;
- the CE marking [9];
- dismantle symbol [G];

2 SAFETY
THE RULES LISTED BELOW MUST BE CAREFULLY READ TO BECOME AN ESSENTIAL
PART OF THE DAILY PRACTICE OF USING AND MAINTAINING THE MACHINERY, SO
THAT ANY ACCIDENT TO THE PEOPLE AND/OR DAMAGES TO THINGS SHALL BE
AVOIDED.
2.1 General safety notes
1. Do not try to start the machine until its operation has been clearly understood.
2. Should any doubt arise, even after having carefully and thoroughly read this manual, contact Technical Service.
3. Make sure that the whole staff using the machine is informed of all the instructions regarding safety.
4. Before starting the machine, the operator shall check the presence of any visible defects on the safety devices and
machine. In this case, immediately notify every apparent breakdown to the manufacturer or to the nearest Customer
Service Centre.
5. Daily check the correct operation of all the switches and safety devices.
6. Safety devices shall never be removed or made ineffective.
7. During the operations of maintenance, adjustment or repair it might be necessary to bypass some safety devices from
the service. This operation must be carried out by authorized personnel only.
8. It is imperative that all the plates and signs placed on the machine be promptly replaced, should they be damaged.
9. The operator must know the function and position of the STOP and START buttons.
10. Replace the broken parts with original spare parts, guaranteed by the manufacturer.
11. Never try anything too risky!
12. All interventions on live parts shall be carried out by authorized personnel only, who shall work only with the machine
unplugged.
13. Do not make any junctions in the electrical connections of electrical circuits.
14. Do not wear clothing, jewellery, accessories that may get caught in moving parts.
15. Keep the area surrounding the machine constantly free of any obstructions.
16. Always wear light gloves and caps and hair nets.
17. Pay utmost attention to all the caution, warning and hazards signs placed on the machine.
18. Enforce safety rules and make workers abide by them. Should any doubt arise, read this manual again before starting
to work.
19. The machine shall be solely used for the purposes associated with its design and according to what was contractually
laid down by the manufacturer.
20. It is strictly forbidden to open the protection panelling: the machine does not contain components that the user can
handle.
21. Do not lean against the machine while it is running.
22. Do not sit down on and/or lean against the machine components.
23. It is forbidden to apply any further device to the machine.
24. Clean the machine components, panels and controls, with soft cloths soaked in a food-grade solution.
25. Any use of solvent - such as alcohol or petrol or diluents - is forbidden for cleaning all the surfaces.
26. Do not start the machine nor the equipment, after drinking or while using drugs or psychotropic substances.
27. Disabled people are forbidden to operate this machinery.
28. Anyone under 18 years is strictly forbidden to operate this machinery.
The misuse of the machine may pose a hazard for the personnel working with it and damage the
machine.
For any problem which might arise during the machine service life and which was not included in this technical manual,
please contact our Customer Technical Service to solve the problem as soon as possible.

2.2 Definition of safety terms
The following terms shall be used thorough this manual in relation to safety:
Dangerous zone every zone inside and/or in the proximity of the machine where the presence of a person
poses a risk for the safety and health of the person.
Persona esposta: whoever finds themselves in a dangerous zone both completely and partially.
Operatore: person in charge of installing, operating, adjusting, servicing, cleaning, repairing,
transporting parts of the machine, and all other activities required for its running.
Safety devices component speci?cally designed by the manufacturer and put on the market separately
from the machine to perform safety functions. Safety component is that device whose
failure impairs the safety of exposed people.
2.3 Safety symbols and labels
The following signs are applied to the machine: prohibition signs, indication signs and warning signs.
This symbol indicates the electrocution risk.
When this sign is present, the operator shall move closer to the machine
only when disconnected from power supply. In this case always wear
dielectric gloves.
This symbol indicates there is a risk of burning.
In case this sign is present, the operator shall get close to the machine
only when all hot parts have cooled down. Before coming in contact,
make sure the surface has cooled down; in any case, always wear
thermal gloves.
2.4 Correct use of the machine
Softgel was designed and manufactured to produce Ice cream and Frozen yogurt. This process takes place inside the
cylinder where the product is continuously blended.
IT IS STRICTLY FORBIDDEN TO USE THE MACHINE FOR OTHER PURPOSES WITHOUT THE
PROPER AUTHORIZATION BY TELME S.p.A., WHICH SHALL NOT BE HELD LIABLE FOR ANY
DIRECT OR INDIRECT DAMAGE THAT MAY RESULT FROM AN IMPROPER USE OF THE MACHINE.
2.5 Operator’s position (Workstation)
The machine requires one operator in charge of loading the mix for Ice cream and Yogurt, starting the processing and
unloading the processed product. The operator shall stand in front of the machine.

4MOVING AND UNPACKING
Keep machine in an upright position AT ALL TIMES to obtain optimal working conditions, both
during transport and installation and use. Keep to instructions on the box.
Note: it is advisable to have all moving, unpacking and installation op-
erations carried out by our Assistance Service or by authorized
personnel supplied with suitable tools.
USE SUITABLE LIFTING EQUIPMENT TO LIFT MACHINE. IT IS
DANGEROUS TO ATTEMPT TO LIFT MACHINE BY HAND.
Net and gross weight specifications are quoted on the packaging and in the documents
supplied.
4.1 Moving machine in its packaging
The packaging is designed to provide maximum protection from knocks and external
agents.
Therefore it is advisable to carry the packed machine as close as possible to the site
where it will be installed.
To move the packaged machine use a lift-fork truck or a bench trolley, and insert forks
in the openings in the base.
4.2 Unpacking
- WOOD PACKING: unnail the top panel, then separate the lateral panels.
- CARDBOARD PACKING; cut the strips and remove the cardboard from the top;
After having opened the packing, make sure the device isn’t damaged. In case of doubt, do not use it, and call the Seller.
THE OPENING OF THE LATERAL PANEL IS ONLY ALLOWED TO THE ASSISTANCE SERVICE OR TO
QUALIFIED TECHNICIANS AND MUST BE MADE BEFORE CONNECTING IT. MAKE SURE NOT TO DAM-
AGE THE INTERNAL PARTS OF THE DEVICE.
- Remove both the lateral panels unscrewing the relevant fixing screws [A];
- Find and unscrew the bolts [B] which fix the device’s frame at the packing’s basement;
The outlet of the supply cable is placed on the device’s lower side. During the lifting make sure not to
damage it.

- Lift the device from the basement, possibly working on the lower side, near the wheels, and however, only on the
frame’s carrying parts. Remove the basement, and lean the device on the floor avoiding bumps;
DO NOT insert objects, ropes or brackets for the lifting THROUGH the device, since these could damage
the inside parts.
- Re-close the lateral panels;
- Replace or move the packing, which is produced with entirely recyclable materials ( ).
5INSTALLING
INSTALLATION MUST BE CARRIED OUT EXCLUSIVELY BY CERTIFIED AND AUTHORIZED TECH-
NICIANS, AND ACCORDING TO THE NORMS CURRENTLY IN FORCE AND FOLLOWING THE IN-
STRUCTIONS BELOW.
5.1 Placing your machine
Place machine on a flat surface.
Place machine away from sources of heath, avoiding direct exposure to sunlight and
allowing air to circulate around it.
Place machine so that the side collection box [23] can be easily pulled out to be
emptied on a regular basis.
Machines supplied with an AIR CONDENSING system need at least 50 cm room in front of the
condenser grill to allow the refrigerator to correctly function. The machine's detailed dimensions
are included in the Technical handbook (Par. Technical Data).
5.2 Assembling
ASSEMBLE ALL PARTS BEFORE PLUGGING MACHINE IN.
Some components of the machine need assembling. You will find them in the package or inside the back-up tub.
Cones holders:
Fix top [6] and bottom [9] brackets onto left side panel with fixing knobs [7]. The top bracket [6] is the one with the
biggest holes;
place cones holder valves [8] in the bottom bracket holes [9];
put cones holders [5] through top bracket holes and fit them in the valves [8].

Drip tray:
Fix drip tray holder [12] onto the front panel with fixing knobs [14];
place front drip tray cup [13] in drip tray holder.
Tap handle:
Remove handle cross pin [30] ;
hook handle [16] fork to piston pin [31];
insert cross pin [30]. You may need to slightly adjust handle.
5.3 Connecting to power
THE POWER INPUT REQUIRED BY THE MACHINE IS HIGH AND, THEREFORE, PARTICULARLY
DANGEROUS
. THE MACHINE MUST BE CONNECTED TO AN ELECTRIC CIRCUIT WHICH COMPLIES
WITH
THE NORMS CURRENTLY IN FORCE AND IMPLEMENTED BY CERTIFIED AND QUALIFIED
PERSONNEL
. ALL SOCKETS MUST BE RELAYED BY ONE OR MORE DIFFERENTIAL CIRCUIT
BREAKERS AND EARTHED.
The manufacturer shall not be responsible for any damages caused by a faulty electrical supply or earthing plant.
Note: If your machine requires THREE-PHASE power supply: it is STRONGLY recommended to install
THREE-PHASE MAGNETO-THERMAL SWITCHES designed to cut off power to ALL phases, even
when overload is on one phase only. Fuses, or other magneto-thermal switches, only cut off single
overloaded phases.
If current is cut off from ONE of the THREE phases, the machine may SEEM operating, however,
the motors will shortly be IRREPARABLY DAMAGED.
THE CIRCUIT MUST FEATURE THE FOLLOWING CHARACTER-
ISTICS:
end with an approved type socket (three poles for monophasic input 1N and 5 poles
for three-phase input 3N 3F). The socket's poles must be marked (R phase or R-
S-T + neutral + earth); the earth pole must be well recognizable;

OUS DANGER.
the socket must be designed to prevent the plug from being inserted incorrectly;
there must be a MAIN SWITCH to cut COMPLETELY off power from the socket,
this can be either included in the socket or within easy reach TO BE USED when
access to moving parts is required.
Check that the VOLTAGE and FREQUENCY written on the Technical Data plate
MATCHES the circuit voltage and frequency.
A plug (three poles for monophasic input 1N and 5 poles for three-phase input 3N–3F)
must be fitted on the power supply cable's end.
The machine's power supply cable features coloured, labelled wires; these must be
connected to the plug terminals as from chart below.

AN INCORRECT CONNECTION INSIDE THE PLUG MAY POSE A SERIOUS RISK AND CAUSE
DAMAGE TO THE MACHINE (ELECTRONIC CARDS). HAVE ALL ELECTRICAL CONNECTIONS
CARRIED OUT ONLY BY CERTIFIED TECHNICAL PERSONNEL.
5.4 Connecting to water supply system
(water condensing machines)
If your machine is supplied with a water condensing system, supply and waste pipes must be set up.
Pipe unions are placed on the machine's rear panel, they are labelled [A] and marked:
IN: fresh water INLET
OUT: waste water OUTLET
Use linen-rubber pipes suitable to bear 15 bar pressure, placing a valve or faucet [B] BEFORE inlet pipe; use a 3/4 rubber
holder [C] tightly fixed with a band [D] to connect pipes to the machine's unions.
Follow these precautions:
Do not reverse tubes and avoid tight bends and bottlenecks.
The machine has been built to use WELL or AQUEDUCT water, at a MAXIMUM temperature of + 25…+28°C.
Don’t put hotter water (i.e. TOWER TANK water) in your machine if it hasn’t got the SPECIAL system to use
it (supplied only if asked): in this case, in the Technical Handbook, Par. Technical Data, it is indicated the right
water temperature to use your machine.
Unsuitable pipes and joints may cause leaks and cause damage to your workroom and, in case of major leaks
and splashes, to your machine. You can easily find household appliances' pipes (i.e. washing machines') on
the market, which have all the requirements, including rubber holders, as well as being economical.
If the local water is hard and contains impurities, have a suitable water softener system or a filter fitted at the
top of the inlet pipe.
Unless otherwise specified in the Technical Handbook, inlet water pressure must be 1.5 to 6 Bar (optimal
pressure: 3 Bar). If water pressure and quantity are inadequate, the machine will have CONDENSING PROB-
LEMS and will stop. If water pressure is higher, it is necessary to fit a pressure limiting device, appropriately
adjusted, above the delivery pipe, otherwise machine will be DAMAGED or anyway it will stop working.
IMPORTANT: When room temperature is below 0°C, remove any water from machine in order to
avoid freezing inside the condenser or pipes and causing SERIOUS DAMAGES. Please call the
authorized Assistance Service.

5.5 Checking rotation
At the end of the installation and whenever the socket needs being replaced, check the beater
direction of rotation.
SWITCH MACHINE OFF OR CUT OFF POWER AND CHECK THAT GREEN INDICATOR POWER
IS NOT ON!
unscrew fixing knobs [19] to remove tap [15];
remove beaterS [21] from cylinders;
plug machine in and switch socket on;
only POWER indicator must come on the control panel;
press ON-OFF . The display will come on;
press WASH and check that the beater socket [33] at the bottom of the cylin-
der CORRECTLY rotate CLOCKWISE (if necessary, use a torch). Press WASH
again to stop rotation;
press ON-OFF to turn machine off;
in case of a correct rotation (CLOCKWISE), your machine is ready to be

IMPORTANT: Progressively, EVENLY tighten knobs [19] cross-
wise to seal tap. Do not EXCESSIVELY force knobs. Failure to
do so may result in leaks and damages.

automatically after about two seconds and the Display shows “HIC”. The
three-phase connection is wrong and it must be changed as follows:

6HOW TO OPERATE YOUR MACHINE
ALWAYS FOLLOW SAFETY MEASURES (REF. CHAPTER 1).
6.1 Controls and indicators
All controls and indicators for the use of the device are grouped in a
single control panel placed on the front panel. Its functioning is
low-voltage electronically managed.
In this manual, the buttons and indicators are identified with the relati-
ve symbol, and/or with an imprint ([K…] for pushbuttons, [Z…] for
indicators).
The functioning of every command is described hereby: to obtain the
best results, an acknowledgment is suggested.

ON-OFF pushbutton and POWER indicator
By pressing the pushbutton the machine turns on and off. When power is on, the light is always on.
SET UP/ RESET pushbutton
By pressing the pushbutton, The display shows the machine's three operative modes. For more details, see
Par. 7.3 - Programming.
Pressing the button after the display appeared 2 small squares, it restore its function after the intervention of protection
circuits.
ADJUSTMENT pushbuttons
These pushbuttons are enabled only after pressing SET UP. They increase or decrease set values. For more details on
their use, see Par. 7.3 - Programming
LEFT PUMP pushbutton (to wash left pump or fill left cylinder)
By pressing the button when machine is not operating (NO ice cream is being made or refrigerated) LEFT force pump
is manually started or stopped. This operation is required to:
fill LEFT cylinder with mixture when empty;
wash and sanitise LEFT pump.
A flashing “O” on the left digit on the display shows that the pump is operating.
RIGHT PUMP pushbutton (to wash right pump or fill right cylinder)
By pressing the button when machine is not operating (NO ice cream is being made or refrigerated) RIGHT force
pump is manually started or stopped. This operation is required to:
fill RIGHT cylinder with mixture when empty;
wash and sanitise RIGHT pump.
A flashing “O” on the right digit on the display shows that the pump is operating.
PRODUCTION pushbutton and indicator
If you press the button, the respective indicator light will turn on, the machine will prepare the ice-cream in the cylinder and
will keep it ready to be served at the programmed substanciality. During the ice-cream preparation, the degree of substanciality
will appear on the display.
PRESERVATION pushbutton and indicator
This function aims at preserving both the mixture and the ice-cream during the night. The setting THICKNESS ICE-CREAM
will appear on the display during the night as well.
WASH pushbutton and indicator
When you press the WASH button, the beater will work, whereas the refrigerating sistem won’t, so that water doesn’t
freeze. The respective indicator light will turn on and PUL will appear on the display.

Display
The display turns on only when machine is on.
A) During the ice-cream freeze (PRODUCTION ) and during the distribution (PRO-
DUCTION ), the number indicating the ICE CREAM CONSISTENCY SETTING
in the cylinder for preservation will appear.
B) During the PRESERVATION the number indicating the ICE CREAM
CONSISTENCY SETTING in the cylinder for preservation will appear.
C) Pressing the "+" pushbutton, the temperature of the mixture in tubs, will appear on
the display.
Note: During Setting up, the display shows several values. For detailed
information, see Par. 6.3 - Programming
6.2 Preparing production
To avoid damages, do not operate machine in dry conditions.
The beaters’ packing gland must be positioned correctly onto the beaters' shaft, otherwise the
machine internal components will get dirty with mixture or ice-cream.
Check that side collection box [23] is in place to prevent water, mixture or ice-cream from leaking
inside the machine.
check that tap fixing knobs [19] are firmly fastened;
check that tap handles [16] are in an UPRIGHT position by pushing them upwards;
in case of machines supplied with water condensing, check that water condensing faucet is open;
check that POWER is on. If not, check plug and socket switch;
press ON-OFF ;
before undertaking production, the machine must be thoroughly washed and sanitized (see Chapter 7);
pour mixture in tubs making sure NOT to completely cover carburettors [3];
wait a few minutes for mixture to drip down in the cylinders. You can facilitate mixture to fill the cylinders by BRIEFLY
spinning beaters (ONLY press BEATING ). During this phase, tubs levels decrease slightly (approx. 2 cm); do NOT
attempt to speed up the mixture flow by removing carburettors;
replenish cones holders with cones or wafers.

6.3 Programming
The device is programmed with optimal average values during the final factory inspection phase.
Do not alter the programme unless it is absolutely necessary.
Note: The device memorises the last programming operation performed and automatically exits the
Programming mode after 7 or 8 seconds.
P1: Reserve mix TUB TEMPERATURE
press button P and the “P1” message will start flashing on the display;
press button P again and the PROGRAMMED TUB TEMPERATURE (°C) message will appear on the display. If
this needs to be adjusted, press the + or buttons. The factory setting is +5°C. The adjustment range is from +1
to +30°C, but we suggest this is limited to between +5°C and +6°C.
P2: ICE CREAM CONSISTENCY (PRODUCTION)
press button P and the “P2” message will start flashing on the display;
press button P again and a number indicating the ICE CREAM CONSISTENCY SETTING will appear on the
display. The factory setting is 5. If this needs to be adjusted, press the + or buttons. The adjustment range is
between 0 and 10 (lower numbers = thinner consistency, higher numbers = thicker consistency), but we suggest
that a practical range of 6 to 7 is adopted.
P3: CONSERVING ICE CREAM IN THE CYLINDER "OVER NIGHT"
press button P and the “P3” message will start flashing on the display;
press button P again and a number indicating the EXTENDED ICE CREAM CONSERVATION in the cylinder
setting will appear on the display. The factory setting is 5. If this needs to be adjusted, press the + or buttons
(lower numbers = lower conservation, higher numbers = higher conservation). The adjustment range is between
0 and 10, but we suggest that a practical range of 4 to 6 is adopted.
To save new settings and terminate a programming operation, press button P again (or wait for a few seconds).
6.4 Production
Press the PRODUCTION pushbutton. The beater and the refrigerating system
of the cylinder will come into operation.Display shows ice-cream THICKNESS,
which is going to increase;
wait for the ice-cream to reach set THICKNESS. The beaters and the refrigerator
will stop. Now the ice-cream is ready to be served.
Note: Before serving the ice-cream, it is recommended to check its
quality by pressing the tap handle and collecting a little of it. Please
put a container under the tap because of the potential splashes of
the ice-cream.
Position an ice-cream cone or cup under the tap handle, then press it. After
serving the ice-cream, BRING the tap handle to its rest position.
After serving the ice-cream bring the tap handle EXACTLY to
its rest position. Otherwise the beater and the refrigerating
system will not stop automatically and the machine will block
for freezing.
Note: Also when the handle is up, the cylinders refrigerating system and the beater will work until the ice-
cream thickness the programmed substantiality again.

In order to get the most out of your machine:
check regularly mixture level in the tubs;
Promptly replenish tubs with mixture, if necessary. Failure to do this will cause the formation of
ice and subsequent blockage of the beater inside the cylinder.
In case you wish to do several distribution of ice-cream, please check the ice-cream substantiality on the display. Wait
some seconds between the ice-cream distributions or alternate the ice-cream flavours.

It is not unusual to find traces of mixture in the side collection tray. However, if they INCREASE in
quantity, replace beaters' packing gland gasket AS SOON AS POSSIBLE (Ref. Par. 8.3 - Parts
disassembling). Failure to do so, would cause mixture to leak inside machine and DAMAGE it.
Use PRESERVATION mode overnight (ref. Par. 7.5) to preserve mixture and ice-cream inside machine.
FATS IN THE ICE-CREAM MIXTURE ARE IDEAL GROUND FOR THE BREEDING OF BACTERIA.
W
HEN NOT IN USE, WE RECOMMEND TO DISASSEMBLE, WASH AND SANITIZE ALL MA-
CHINE PARTS WHICH COME INTO CONTACT WITH THE PRODUCT AND DISCARD ANY REMAIN-
ING MIXTURE.
6.5 Preservation (overnight)
IT IS REQUIRED TO REMOVE ALL REMAINING MIXTURE AND ICE CREAM FROM MACHINE BY
THE
INGREDIENTS USE-BY DATE AND TO DISASSEMBLE, WASH AND SANITISE THOR-
OUGHLY ANY PARTS WHICH IS IN DIRECT CONTACT WITH THE PRODUCT (REF. CHAPTER 7).
THIS IS ALSO REQUIRED WHEN USING ONLY PRESERVATION MODE.
This allows stopping the reproductive cycle of bacteria, which must, AT ALL TIMES, be lower than the limits
required by the law.
Only the FIRST ingredients’ use-by date is to be taken into account after sanitation even if fresh ingredients were
successively added to the original mixture.
1. SHUTTING DOWN operations:
press PRESERVATION pushbutton;
check that release handles and tubs' lid are FIRMLY CLOSED. If an indicator light appears on the display next to
the right hand side digit, the handle is not completely closed.
Note: the preservation temperature allows to maintain almost liquid ice-cream in the cylinder, because the
machine stirs it without damaging it.
2. OPENING UP operations:
IN CASE THE PRESERVATION TEMPERATURE IS TOO HIGH, OR AN ALARM CODE APPEARS,
THE MIXTURE IN THE MACHINE HAS NOT BEEN CORRECTLY PRESERVED. THE MIXTURE
MUST
BE DISCARDED, ALL MACHINE PARTS WHICH COME INTO CONTACT WITH THE MIXTURE
MUST
BE DISASSEMBLED, WASHED AND SANITIZED (REF. CHAPTER 7) BEFORE MACHINE
CAN BE USED AGAIN.

7WASHING AND SANITATION
7.1 Rinse - preliminary wash
RINSE ONLY removes most mixture and ice cream residuals from the machine and is used when a fresh mixture of a
different colour or flavour is to be poured in the machine.
PRE-WASH with detergent washes the pumps inside in preparation for sanitation.
PROCEED AS FOLLOW:
Press PRODUCTION or PRESERVATION to stop machine. Relevant indicator light will come off;
wait for cylinders to defrost;
place a container under the tap, pull handles down and release as much as possible mixture. Press BEATING for a
few, brief periods to operate beaters;
Do not operate beaters for prolonged periods as lack of lubrication would cause damage to
either the beaters or cylinders.
fill tubs with clean, warm water (MAX. 30°C), MUST CERTAINLY NOT BE ANY HOTTER!;
DO NOT press PRODUCTION or PRESERVATION as this would freeze water in the cylin-
ders.
press BEATING , then LEFT PUMP MP1 and RIGHT PUMP MP2. Open levers to discharge water (when all of the
water is out press BEATING to stop the beaters and the pumps). Rinse only is now complete;
release pressure in cylinders by SLOWLY opening central lever;
open ALL THREE levers and discharge all water from the cylinders.
7.2 Washing the pumps
To wash the pumps, repeat the operation with a solution of warm water and a suitable amount of detergent that is COMPATIBLE
WITH THE FOODSTUFFS USED. Before draining out the detergent solution, wash the sides of the tub. Then rinse with
water only until the water discharged from the taps is completely clear;
THE PUMPS SHOULD NOT BE DISASSEMBLED AS THEY NEED TO BE WASHED UNDER
PRESSURE WITH DETERGENT AND SANITISING SOLUTIONS.
THE TEMPERATURE OF THE WATER USED FOR WASHING AND SANITISING SHOULD
NEVER EXCEED 30°C AND
MUST CERTAINLY NOT BE ANY HOTTER! OTHERWISE THE
POLYMER COMPOSITE COMPONENTS MAY BE DAMAGED.
7.3 Parts disassembling
To make washing and sanitation easy, all parts coming into contact with the product can be effortlessly and quickly
disassembled by the operator.
Carry out preliminary washing operations (ref. Par. 8.1) for easy access to all parts.
