1. Preheat the oven on Roast setting at
350° and set time to 25 minutes.
Lightly coat a 9" square baking pan
with cooking spray and line with
parchment paper.
2. Put butter and both chocolates into a
bowl and place over a pot of
simmering water. Once it is
completely melted, stir in cocoa
powder and espresso powder. Set
aside to cool down.
3. Use a hand mixer, beat the eggs and
vanilla extract to break them up, then
gradually add the sugar. Mix until
light and thickened.
4. Sift flour and salt into the chocolate
mixture and fold gently.
5. Fold the chocolate mixture into the
egg mixture until the batter is no
longer streaky.
6. Prepare another mixing bowl.
Combine peanut butter, icing sugar
and melted butter together.
7. Pour chocolate brownie batter into
the prepared pan. Dollop the peanut
butter mixture on top and, using a
stick or a knife, decoratively swirl into
the brownie batter. Be careful not to
over-mix the peanut butter into the
brownie batter.
8. Once the oven is preheated for 7
minutes, place the pan into the oven
on layer 2 . Press OK/START button
and cook for 22 minutes until edges
are just dried.
9. When cooking is completed, cool dow
the brownie and chill in the
refrigerator overnight before cutting
and serving.
