Basic recipes to get you started with your pressure cooker
• In the cooker, brown the meat in the
hot oil and sprinkle the spice mixture over
the meat. Add the onions, garlic and
tomatoes. Add the water and stir well.
Season. Close the cooker.
• As soon as the steam starts to release,
lower the heat and cook according to the
times indicated below.
• Release pressure. Open the cooker.
Serve with cold yogurt sprinkled with
finely chopped mint leaves.

• Scrape, wash and drain the mussels.
• Melt the butter in the cooker and cook
the garlic and shallots gently until they are
transparent. Pour in the water and wine.
Add the thyme and bay leaf. Bring to a boil
and add the mussels. Close the cooker.
• As soon as the steam starts to release,
lower the heat and cook according to the time
indicated below.
• Release pressure. Open the cooker and
serve. You can also remove the top shells
from the mussels, lay them out on a plate and pour fresh tomato sauce
over them. Serve hot.

without removing the water. Beat in the butter and/or the cream.
