THE ECONOMY OF VACUUM
SEALING
Keep Foods Fresher, Longer
Oxygen in the air causes food to lose its flavor,
texture, color and nutrients. When you vacuum
seal with the FRESHLOCK Turbo II, you remove
air from the storage bag and prevent spoilage due
to oxidation. This also inhibits the growth of
microorganisms, such as bacteria, on food. The
result is less food thrown away and less money
wasted.
In general, vacuum sealing keeps refrigerated
foods fresh approximately twice as long as food
not packaged by vacuum sealing. Dry foods, such
as flour, sugar, nuts, pasta, cereal, snacks and
dehydrated fruits will have a much longer shelf-life
when vacuum sealed.
Eliminate Freezer Burn
"Freezer Burn" is a combination of oxidation
and dehydration of frozen food that results in the
loss of texture, flavor and nutrition. This is
common with frozen foods improperly packaged
for the length of time stored. Vacuum sealing
eliminates oxidation and, therefore, practically
eliminates freezer burn.
FRESHLOCK Turbo II can be used to pack
meats, fish, poultry, vegetables, baked goods and
other items for freezing.
Save on Grocery Bills
Since vacuum sealing keeps food fresher and
longer, you can buy in bulk volume or stock up on
sale items and vacuum pack for extended stor-
age.

HOW TO OPERATE THE
DENI FRESHLOCK TURBO II
VACUUM SEALER
Before Operating Your Unit
Place your FRESHLOCK Turbo II on a firm,
level, dry surface and plug it directly into a
standard 110 AC outlet. (Extension cords may
prevent the unit from working properly. If
necessary always use an extension cord with
equal or greater rating.)
Your FRESHLOCK Turbo II includes two
rolls of superior-grade polyethylene plastic.
Place one roll in the unit and put the Heat-
Selector Switch on Medium (M).

To Make the First Bag from the
Polyethylene Roll
1. Make sure that the selector switch is in the
Cut-Bag position.
2. Pull the plastic out over the sealing wires
(Figure 2). The roll is folded into a double layer
to form the bottom seal of each bag.
3. Lower the lid and then press down firmly on
the lid with both hands to activate the sealing
mechanism. Both the red (VACUUM) and
green (SEAL) lights will turn on (Figure 3).
4. After the green (SEAL) light goes off, (in about
10-15 seconds), lift the lid and tear away the
excess plastic at the beginning of the roll.
5. Next, create a custom-size bag by pulling the
amount of plastic you need from the roll and
out over the sealing wires.
6. Repeat the sealing process in Step 3. When the
green (SEAL) light goes off, pull the bag away
from the sealing wires. You now have a bag
sealed on three sides, ready to be filled and
vacuum sealed.
To Make Additional Bags
from the Roll
After the roll is started, you only need to seal
one side to create each additional bag. The first
side will be sealed from previous sealing action.
To make each additional bag, simply pull out the
amount of plastic needed from the roll over the
sealing wires and press down to activate the
sealing mechanism. When the green (SEAL) light
turns off, simply peel the plastic from the wire and
you will have your bag.
To cut and seal a side of the bag, press down firmly
on the lid with both hands.

To Vacuum-Seal a Bag
1. Follow the instructions to make a bag.
2. Place the item to be stored inside the bag. Do not
fill completely. Allow a margin of 2 to 3 inches
between the item and the open end of the bag.
3. Tilt vacuum nozzle up. Place the open end of the
bag over the sealing wires and insert the vacuum
nozzle completely inside the bag (Figure 4).
Press down on the vacuum nozzle to lock the
bottom layer of the bag in place.
4. Close the lid and press down gently with your left
hand on the left side of the lid to activate the air-
extraction (VACUUM) motor (Only the red light
will turn on). Do not press down on the middle or
right side of the lid; this will block the flow of air
from out of the bag and in through the vacuum
nozzle.
5. As the air is drawn out of the bag, the bag will
cling to the item being sealed. It may help to
place the bag on a cutting board to raise the bag
to the height of the nozzle (Figure 5). It may also
help to lift, pull or manipulate the bag.
6. Continue to press down with your left hand on the
left-hand side of the lid. When you have removed
as much air from the bag as possible, immediate-
ly press down with your right hand on the right
hand side of the lid to activate the sealing mecha-
nism (Figure 6). Both the red and green lights will
turn on. NOTE: The vacuum motor does not
operate when the green (SEAL) light is on.
7. When the green light turns off, open the lid
and remove the bag. You have completed your
vacuum-sealing action.

Food, liquids and other items can be sealed
without using the vacuum seal feature. Simply
press down firmly on both sides of the lid to
seal without activating the air-extraction (VACU-
UM) motor.
To vacuum out the air,
press down on the left-hand
side of the lid only.
It may help to place the bag
on a cutting board, or to lift,
shake or pinch the bag.
To seal the bag, press down firmly
on both sides of the lid.

Allow hot or boiling foods to cool for
approximately five minutes before packing.
Leave a 1 1/2" margin between the food and
seal to allow for expansion when freezing and
cooking.
FRESHLOCK bags can be re-sealed. Allow
approximately 1" bag material above the seal for
each time the bag is to be re-sealed.
The white stripe on the bag is a label to record
the date, item stored, weight, etc. When labeling,
do so before placing anything in the bag. We
recommend writing with a pen or an indelible
(i.e., laundry pen or other water-resistant)
marker.
Liquids can be vacuum sealed by first freezing
the liquid in a container and then placing the
solid form in bag.
Seasonings and flavoring alter or intensify during
storage. It is best to reduce the amount of salt,
pepper and spices in dishes that are to be
frozen.
Helpful Hints and Tips
After placing the vacuum nozzle inside the
bag for vacuuming and before lowering the lid
to vacuum-seal, open the bag wide, keeping
the bottom part of the open end of the bag
locked under the vacuum nozzle. This helps
to create an air channel that enhances the
vacuum action.
Make sure that the sealing area inside
and outside of the bag is free from liquid
food or other particles.
Do not let up pressure on the lid between
operating the air-extraction (VACUUM) feature
and activating the sealing mechanism. This
could result in air re-entering the bag that you
are sealing.
Always make sure to remove the excess
plastic from around the vacuum nozzle after
you have finished sealing a bag.
We recommend waiting one minute between
each sealing operation.
To maintain high-integrity sealing action,
frequently clean the sealing wire (as
described on page 17).

Cut-Bag Switch Position
To cut and seal a side of a bag, place the
selector in the Cut-Bag position (Figure 8).
When the switch is in the Cut-Bag position,
and the lid is pressed down fully, the middle
(exposed) wire of the heat-sealing element is
activated. This wire then cuts one side of the bag.
SPECIAL FEATURES OF THE
FRESHLOCK TURBO II
Patented MultiSeal™ Three-Wire
Heat-Sealing System
The patented heat-sealing mechanism has
three wires (Figure 7). The outer (covered) wire
seals the first side of the next bag to be made
from the roll. The center (exposed) wire cuts both
the side of the bag being made and the first side
of the next bag to be made from the roll. The cen-
ter wire also forms an extra-protection MultiSeal
for each bag.
The two covered wires seal the bags.
The exposed wire cuts the bag.

Create-A-Pouch™ "O" Switch Position
You can use your FRESHLOCK Turbo II to
create attached pouches or a series of connected
bags. When you move the selector switch into the
Create-A-Pouch "O" position (Figure 9), the middle
wire is turned off. Therefore, the bag is only
sealed, not cut, when you press down on the lid.
You can use this feature to attach a bag
containing sauce to a vacuum sealed entree,
attach a bag with a topping to a vacuum sealed
dessert, or create a series of connected bags to
make ice pops. Creating pouches is also an ideal
way to portion individual servings of snacks as
well as prepare recipe ingredients.

To use this option:
1. Place the selector switch in the Create-A-Pouch
"O" position.
2. Pull out the amount of polyethylene plastic needed
to make the first bag or pouch. Then seal the side
of the bag according to the previous instructions.
3. Raise the lid. You will notice that the plastic is not
cut, but rather sealed along two parallel sides.
This forms the sealed edges of two attached
bags/pouches (Figure 10). NOTE: You may
separate the bag(s) at a later time along this area
using scissors.
4. Continue to pull the polyethylene from the roll until
you have enough plastic for your second
bag/pouch. Repeat sealing action. Repeat as
many times as necessary to create the desired
number of attached bags/pouches.
5. Before creating your final bag/pouch in the
series, return the selector switch to the Cut-Bag
position. This will cut the side of the final
bag/pouch away from the roll.
6. Fill each bag/pouch.
7. Place the bags/pouches with the open ends
along the sealing wires. Finish the sealing
action by following the previous instructions.
NOTE: You will only be able to vacuum-seal
one of the bags or pouches in the series.

Heat-Selector Switch
By adjusting the Heat-Selector Switch (Figure
11), you can use your FRESHLOCK Turbo II to
seal many other plastic bags of different
thicknesses as well as plastic-lined foil wrap (i.e.
potato chip bags).
When sealing FRESHLOCK bags from the
supplied polyethylene roll, use the Medium (M)
setting.
In general, when sealing plastic that is about
the same thickness as the FRESHLOCK bags,
use the Medium (M) setting. When sealing plastic
that is thicker, use the High (H) setting. When
sealing plastic that is thinner or lighter, use the
Low (L)
setting. When sealing a traditional plastic wrap or
sandwich storage bag, use the Low (L) setting. To
seal plastic-lined foil wrap, use the High (H)
setting.
If you are not sure which position of the Heat-
Selector Switch to select for the material you are
using, place the Heat-Selector Switch in the
position you think is correct and then seal a
small portion of the material to test this position.
If you have difficulty removing the material from
the cutting (center) wire, then move the switch to
the next highest setting (i.e., M to H).
If the material pulls away from the cutting and
sealing wires too easily, or leaves a visibly poor
seal, then move the switch to the next lowest
setting (i.e., M to L).
These are only guidelines for using the Heat-
Selector Switch. The best setting for the material
you seal will be determined by your own results.
Vacuum sealing can also
be used with other types
of plastic bags (snack
bags, rice, etc.).

SPECIAL COOKING OPTIONS
Boil-in-Bag Cooking
Foods cooked by the boil-in-bag method
retain a high level of flavor and nutrients.
FRESHLOCK polyethylene bags can be used for
boil-in-bag cooking. As an added precaution, it is
recommended that food in a FRESHLOCK can be
placed inside a second, larger FRESHLOCK bag
and vacuum sealed before cooking.
1. Fill a large saucepan with water and bring to a
full boil.
2. Add FRESHLOCK bag to the saucepan. Do
not cover. Do not puncture the bag.
3. Bring to a second boil and reduce heat.
Maintain low boil.
4. Cooking time is measured from the second
boil. Cook soups approximately 6-8 minutes;
sauces 8-10 minutes; pre-cooked chicken and
casseroles 12-16 minutes. Add approximately
2-4 minutes cooking time for frozen foods or for
quantities of more than 16 ounces.
5. Do not cook longer than approximately 20
minutes. Large quantities should be defrosted
before cooking.
Microwave Cooking
Foods stored in "Deni" FRESHLOCK
polyethylene bags can be cooked or reheated in a
microwave oven.
1. Place the bag on a microwave-safe plate or
dish.
2. Puncture the bag several times with a fork to
allow steam to escape during microwave
cooking.
3. Consult your microwave booklet for the proper
times to heat commercially prepared boil-in-bag
foods.

Store luncheon meats, cheeses and salads
fresh from the deli.

PROPER CARE OF YOUR
DENI TURBO II
Before attempting any cleaning operations, make sure that
the unit is unplugged.
To clean the lid and housing, simply wipe clean with a soft,
damp cloth. Do not immerse in water. Do not use any
abrasive cleaners.
If pieces of plastic stick to the cutting wire, wipe them off
carefully to avoid damage to the wire. It may help to carry
out a sealing operation (closing lid and pressing down
firmly) without a bag in position. This will heat the wire and
soften any plastic film adhering to it.
