CVap technology uses a combination of moist and dry heat to provide the
moisture needed for both yeast development and chemical leavening. The
environment generated within the CVap cabinet make it unnecessary to
emerge custards in a water bath.

Set Points: Retherm Pre-programmed Channel 7 - Food Temperature 160˚F,
Food Texture 330˚F, Differential 170˚F.
Cook time varies - 18-25 minutes.

Process: Preheat unit on Channel 7. Prepare pans as necessary for custards.
When display shows LOAD, place pans in the CAT522 unit, or first on
oven racks or sheet pans in the CAT529. Cook to an internal tempera-
ture of 160˚F, or according to the manufacturers instructions. Once
cook cycle is complete move product to holding cabinet or prepare for
service. It isn’t necessary for the custards to be placed in a water bath.
