d HOW IT WORKS
1 Add yoghurt culture to warm milk, keep it warm for 8-16 hours (we suggest overnight), let it
cool, refrigerate for 2 hours, then eat it.
2 Plain yoghurt will keep in the fridge for 8-10 days, or a deep freeze for about a month.
3 Yoghurt kept in the fridge may separate – if it does, stir it together.
4 Freezing yoghurt may change its consistency, so frozen yoghurt might best be used for
cooking rather than eating.
C YOGHURT CULTURE
5 You may use 30ml (2 tablespoons) of:
a) Unflavoured live yoghurt – it must be fresh (look for a long expiry date).
• Different brands will give different results.
b) Yoghurt you made previously.
• The bacteria weakens over time, so you can only do this 10 times before using another
new culture.
c) Freeze-dried yoghurt culture from a pharmacy or health food shop
• If the instructions on the culture package differ from this guide, follow the instructions on
the package.
C MILK
6 You will need 1 litre of milk.
7 Whole milk gives thicker yoghurt than low fat milk.
8 To make it even thicker, you may add up to 8 tablespoons of powdered milk to the liquid milk.
9 You may also use reconstituted powdered milk, or tinned evaporated milk.

C PREPARATION
10 Sit the appliance on a stable, level, heat-resistant surface.
11 It must be draught-free, vibration-free, and protected from sunlight.
12 Wash the pots and lids, rinse them, and dry them.
C MAKING YOGHURT
13 You need to kill the bacteria in the milk, to prevent them competing with the bacteria in the
yoghurt culture.
14 While you are heating the milk, let the yoghurt culture get to room temperature.
15 Put the milk in a pan, and heat, stirring constantly, on a medium heat, until just short of
boiling point.
16 Remove from the heat when small bubbles form round the edges of the pan.
17 Let the milk cool to between 37°C and 45°C.
18 Stir the yoghurt culture into the milk.
19 They must be thoroughly mixed, or the yoghurt will be lumpy.
20 Pour the mixture into the pots.
21 Do not put the lids on the pots.
C SWITCHING ON
22 Put the plug into the power socket.
23 Remove the lid.
24 Put the filled pots (without lids) into the holes in the base.
25 Replace the lid.
26 Press the 3 button. The light will glow.
27 Use the h and min buttons to set the timer.
28 We suggest you start with 10 hours, then experiment to find the settings that suit your taste,
the type of yoghurt you like, and the type of milk used.
29 Press the v button.
30 Leave the appliance undisturbed.
31 When the timer counts down to 0, it will beep, then switch off the heater and the light.
C FINISHED?
32 Press the 3 button.
33 Remove the lid.
34 Take care not to drip condensation from the lid into the pots.
35 Check the yoghurt.
a) If it’s not quite firm enough, you may want to go back to point 25, and warm it for a couple
of hours more.
b) If its totally liquid, then it has been cooked for too long.
• If it tastes all right, it can be used as drinking yoghurt.
36 If you want to flavour the yoghurt, gently stir a little fruit syrup or chopped fruit into the pots.
37 Put the lids on the pots and refrigerate for at least two hours before serving.
C CARE AND MAINTENANCE
38 Unplug the appliance and let it cool.
39 Wipe all surfaces with a clean damp cloth.
40 Hand wash the removable parts.
` You may wash these parts in a dishwasher.
41 If you do, the harsh environment inside the dishwasher will affect the surface finishes.
