Recipes
Cream of Vegetable Soup
serves 2 - 4 people
Ingredients
2 - 3 tbsp. cooking oil
7 oz (200 g) onions
7 oz (200 g) potatoes (for best results use floury varieties)
7 oz (200 g) carrots
11.8 - 13.5 fl oz (350 - 400 ml) vegetable stock (fresh or
instant)
Salt, pepper, nutmeg
0.2 oz (5 g) parsley

into slices. Peel and rinse the potatoes, then cut them into approx.
0.8 in (2 cm) cubes.
2) Heat the oil in a pan, add the onions and sauté them until they
are translucent. Add the carrots and potatoes and sauté them
as well. Pour in sufficient broth so that the vegetables are well
covered and then boil everything for 10-15 minutes until soft.
If necessary, add more broth whenever the vegetables are no
longer completely covered.

Pumpkin Soup
serves 4 people
Ingredients
1 medium-sized onion
2 garlic cloves
0.4 - 0.7 oz (10 - 20 g) fresh Ginger
3 tbsp. rapeseed oil
14 oz (400 g) pumpkin (for best results use Hokkaido pumpkin
because the shell becomes soft when cooked and it does not
need to be peeled)
8.5 - 10 fl oz (250 - 300 ml) coconut milk
8.5 - 17 fl oz (250 - 500 ml) vegetable stock
Juice of ½ orange
some dry white wine
1 tsp. Sugar
Salt, pepper
Preparation
1) Peel and chop the onion and garlic. Peel and finely chop the
ginger. First, sauté the onion and ginger in hot oil. After 2minutes
add the garlic and continue to sauté.
2) Thoroughly clean the pumpkin under warm water with a vegetable
brush, then cut it into 0.8 - 1.2 in (2-3 cm) cubes. (If a pump-
kin other than Hokkaido pumpkin is being used, it must be
peeled first). Add the pumpkin cubes to the onions and ginger
and sauté them as well. Fill with half the amount of coconut
milk and sufficient vegetable broth to cover the pumpkin well.
Cook for approx. 20-25 minutes with the lid on until soft. Mix
everything with the hand blender until smooth. Slowly, add the
remaining coconut milk until the soup has the correct soft and
creamy consistency.
3) Season the soup with orange juice, white wine, sugar, salt, and
pepper so that it has both a sweet and a balanced sour-salty
note in addition to the sharp flavor.
