GENERAL SAFETY INSTRUCTIONS
This Vesta appliance has been tested and inspected to ensure the highest quality and safety standard. Read these
operating instructions carefully before you start to use the unit and save this manual and all the information (wiring
diagrams and spare parts) and instructions. This unit must be used only to cook food in catering establishments.
Any other use is therefore considered dangerous.
This manual must be read and understood by all people using or installing the equipment. If you have any questions
concerning installation, operation, or maintenance, contact Tecnovesta S.r.l. at our website www.tecnovesta.com.
NOTE: All claims for warranty must include the full model and serial number of the unit.
UNPACKING
1. Carefully remove the appliance from the pallet and box.
2. Remove all protective plastic film and packaging materials before connecting electrical power, water pipes and
drain.
3. Read all instructions in this manual carefully before initiating the installation of this appliance.
This manual is considered to be part of the appliance and is to be provided to the owner or manager of the
business or to the person responsible for training operators. Keep the manual in a place where it can be consulted
by the operator using the oven.

INSTALLATION
Warning: The oven must be installed by qualified professionals: electricians and plumbers. This appliance
must be branch circuit protected with proper ampere capacity, in accordance with the wiring diagram located in
this manual or the label positioned on the side of the oven. Water pipe connections must be at the right water
pressure and drainage must be safe for hot liquids. This appliance is equipped with a safety overheating thermostat
that stops power supply when temperature exceeds 340°C
Vesta convection oven must be installed in a location that will permit the oven to function for its intended
purpose. We suggest allowing adequate clearance for ventilation, proper cleaning, and maintenance. Incorrect
installation, servicing, maintenance, cleaning or modifications to the unit may result in damage, injury or death. Any
other use is not intended and is therefore considered dangerous.

The oven can be mounted on an optional oven stand or optional holding cabinet and leveled registering the
adjustable feet. All clearances for proper ventilation and air supply must be maintained to minimize fire hazard. Do
not locate the oven immediately adjacent to any other heat-generating appliance.

Any appliance that is not furnished with a power supply cord must be installed by a qualified electrician. This
appliance must be branch circuit protected with proper ampere capacity, in accordance with the wiring diagram
located in this manual and the label positioned on the side of the oven.
Connect the oven to the electric line through the terminal block on the rear of the oven. Remove the service
panel for access to the terminal block and connect the cord in accordance with panel indications. The oven is
wired at the factory for either single phase or three phase service as indicated on the original purchase order.
Input voltage and phase must match the voltage and phase of the oven as displayed on labels on oven side or page
2 of this manual.

The oven and spray shower (optional) must be connected to the main water supply line. We suggest to always
install a water softener to avoid calcium build-up in the valves and pipe connections and other
components exposed to water. The water pressure should be between 1 and 2 bars. Once connected the
solenoid valve to the main water line, adjust the desired level of water flow by turning the knob of the regulator
located between the service panel to terminal block for electric connections and the solenoid valve connector on
the back of the oven (for gastronomy ovens).
Connect the oven drain to the waste water pipe to allow the drainage of excess water in the cooking chamber (for
gastronomy ovens).

START-UP OPERATION
Once installed, the oven is ready to use. This appliance is intended for use in commercial establishments where all
operators are familiar with the purpose, limitations, and associated hazards of this appliance. This appliance is
intended to cook, hold or process foods for the purpose of human consumption. No other use for this appliance is
authorized or recommended. Operating instructions and warnings must be read and understood by all operators
and users.
BEFORE INITIAL USE: Interior oven surfaces must be heated to remove surface oils and the accompanying
odor produced during the first use of the oven. Vesta ovens are inspected, tested and cleaned before
commercialization therefore the residual oils from manufacturing are minimal.
1. Wipe all wire shelves, side racks and the full oven interior with a clean, damp cloth.
2. Close the oven door, set timer to the ON position, and the thermostat to 150°C.
3. Allow the oven to work for approximately 2 hours or until no odor is detected.
PREHEATING: Always preheat a cold oven for a minimum of 20 minutes before cooking product. Follow the
operating instructions indicated on the next few pages of this manual.
ANALOG CONTROL PANEL OPERATION
1. Set TIMER to ON position.
2. Set cooking TEMPERATURE by rotating the knob to desired temperature; when the oven reaches the set
temperature, orange light goes off and you can load sheet pans as quickly as possible.
3. Rotate TIMER knob to desired cooking time. At the end of the set time the green light and buzzer go off.
4 Push STEAM button for extra moisture during cooking time.
5 Rotate GRILL TIMER knob to desired level. You can set timer up to 30 minutes by rotating the knob clock wise;
or manually by rotating it counter-clock wise.

HOW TO OPERATE A COOKING CYCLE Bakery Smart Plus+
Once installed and upon completion of the start-up operation, your Vesta convection oven is ready to use.
1- Switch ON the oven by pushing the top button above the displays. The top display shows the
temperature inside the oven.
2- By pushing the + or button you can set the desired COOKING TEMPERATURE for your recipe.
Temperature flashes until you push the time button or automatically sets after 5 seconds.
3- Push the TIME button and the bottom display will show the flashing COOKING TIME that you can
change by pushing the + or button from 1 to 199 minutes. Set the COOKING TIME by pushing the
TIME button again. To set infinity cooking time, push the button below 1 minute. After pushing the
TIME button the display will show three flashing dashes.
4- Push START STOP button to start the COOKING CYCLE. During the cycle, temperature display
shows the oven temperature and time display shows the decreasing time from set time. You can change
the parameters by following points 2 and 3 any time during the cooking time. At the end of the cycle, a
buzzer will go off and the two displays will start to flash.
5- The STEAM button can be used any time during the cooking cycle. The quantity of mist depends on how
long you press the button.
6- This appliance can store up to 10 programs of recipes. First 5 recipes are already programmed and you
can select them from the RECIPE button. The top display will show the program number (P 1 - 10) that
can be changed by pushing the + or button. Once the number of the program is set, start the program
by pushing START STOP button.
7- To STORE new programs push START STOP button for a few seconds after the end of a cycle. Top
display will show P 1 label, select the desired program number pushing + or buttons and confirm
selection pushing the recipe button for 4 seconds.
8- This Vesta oven is equipped with DELAYED START function. You can program a delayed start up to 24
hours. With the oven OFF, push the START STOP button for 4 seconds. Set temperature as per point
2. Push the time button to set the time delay for the oven to start. Using the + or button you can select
a time between 1 and 24 hours. To store the program, push the STEAM button. If you want to check the
count- down push the START STOP button.
HOW TO OPERATE COOKING CYCLE Gastronomy Smart Plus+
Once installed and upon completion of the start-up operation, your Vesta convection oven is ready to use.
1- Switch ON the oven by pushing the top button above the displays. The top display shows the
temperature inside the oven.
2- Now you can choose from the following options:
i) Set temperature and time for timer cooking cycle;
ii) Set core probe cooking cycle;
iii) Set delta T cooking cycle (core probe);
iv) Start cooking preset program;
v) Set delayed oven start.
3- TIMER COOKING CYCLE:
i) Push the TEMPERATURE button and the led inside the top display will start flashing. Rotate the
encoder knob to set the desired cooking temperature and then set it by pushing the knob.
ii) Push the TIME button and the led inside the central display will start flashing. By rotating the
encoder knob you can set the desired cooking time and then set it by pushing the knob. Time range is
between 0 and 999 minutes. If you turn the encoder knob below 0 and confirm, the three dashes on
TIME display will conform you that you are using timer on infinity.
iii) Push the STEAM% button to set the desired level of humidity for the cooking cycle. The led on
the central display will start flashing . Rotate the encoder to the desired level from 0% to 100%.
iv) Push START - STOP button and the oven will start the preheating program. The display will
show “Pre” Once the oven reaches the preheating temperature (+20° C higher than the set cooking
temperature) the buzzer will go off and the oven will automatically maintain the temperature. Once
you load the oven and close the door the cooking cycle will start.

4- CORE PROBE COOKING CYCLE:
i) Insert CORE PROBE in the socket (optional) positioned below the encoder knob on front of
your oven, then place the food you want to cook in the oven with the pin inserted in the thicker
part of food;
ii) Push the CORE PROBE button and the temperature led will start flashing and the display will
show “Prb”.
iii) Rotate the knob to set the desired cooking temperature inside the food and confirm by pushing
the encoder; the core probe led will start flashing;
iv) Set STEAM level and push START STOP. The cooking cycle will end once the temperature
inside the food has reached the set CORE PROBE temperature. During core probe cooking
cycle, the timer function is excluded.
5- DELTA T COOKING CYCLE (only if using a core probe):
i) Push DELTA T button. The display shows “dt” and core probe led will start flashing;
ii) Rotate the encoder knob to set the temperature as per the core probe cooking cycle and
confirm by pushing the knob;
iii) DELTA T led will start flashing; set the differential temperature you want to keep during the
cooking cycle and confirm it pushing the knob;
iv) Set STEAM level and push START STOP. The cooking cycle will end once the temperature
inside the food has reached the set CORE PROBE temperature. During core probe cooking
cycle, the timer function is excluded.
6- COOKING PROGRAM:
i) This appliance can store up to 50 programs of recipes. You can preset a 3-step-cooking-cycle for
each recipe (temperature, time and steam level).
ii) Push the PROGRAM button. Display will show program “01”. If the number is flashing it means it
is available for storing a new program, otherwise pre programmed cooking temperature and time
will be displayed.
iii) By rotating the encoder knob choose the program you want to use. Available program numbers
are the flashing ones;
iv) Once you have selected the desired program number, push START STOP button to start the
pre set cooking cycle;
v) To STORE new programs push the PROGRAM button; rotate the encoder knob to find a free
program number (flashing) then push the encoder knob to confirm;
vi) To set the first of three steps, the led will start flashing; set time, temperature and steam as per
timer cooking cycle then confirm the first step by pushing the program button; to set the second
step, the led will start flashing and you can store the second and third steps like you have done
for the first one;
vii) At the end push the PROGRAM button for 5 seconds until the display will show “MEM” to
indicate that the complete program has been set;
viii) You can skip one of the steps by pushing the PROGRAM button for 5 seconds after the setting
of one step; display will show “MEM” to confirm the program has been set;
ix) To cancel a program step, select the step you want to cancel and push the TIME button for three
seconds. Repeating the same operation with the other steps of the same program permits you to
cancel the complete program;
x) To change a set program, push the RECIPE button and + or button until the top display will
show the program number (P 1 50); then repeat steps vi through viii.
7- DELAYED START:
i) After setting one of the above cooking options, instead of pushing START STOP button to
start the cycle you can press the TIME button for 3 seconds. Display will show “000and with
the encoder knob you can set the count-down timer up to 999 minutes (about 16,5 hours). To
confirm press the knob. Display will show the count-down starting from the selected hours.
8- QUICK COOLING SYSTEM: To cool down the oven, set temperature at least 20°C. below the actual
oven temperature, open the door and push the button START STOP. Fan will start to blow until the
temperature reaches the set value. A buzzer will indicate the end of the procedure.

THE 10 GOLDEN OPERATING RULES
OPERATING INSTRUCTIONS C H E F OPERATING TIPS
The Vesta convection oven will provide the best results and longest possible service by implementing the following
suggestions.
1. Make sure you preheat the oven 20° C over the set cooking temperature before loading the food, especially if
frozen.
2. Quickly place the sheet pans on the rack to prevent the set cooking temperature to drop.
3. Always load the right amount of food for each pan. Overloads can cause poor results or longer cooking time.
4. If you are not using all the levels you can space them leaving empty ones between pans.
5. Make sure there is always enough room between pans (about 3 cm) to allow an even distribution of air
circulation throughout the oven.
6. When you use a new oven, keep record of the temperature, timing and steam. For first loads use lower
temperatures and then slowly increase it for following loads, if needed, until you obtain the best results.
7. When the buzzer goes off and time is over, unload the oven immediately to avoid overcooking.
8. After using the oven, wait for the components to cool off before cleaning.
9. Remove racks and fan cover and clean the oven with a soft cloth removing grease and food remnants. Do not
use abrasive sponges.
10. Clean the oven with a non corrosive detergent. When using the shower, NEVER spray cold water on hot
door glass and when temperature is above 50° C.
QUICK COOKING GUIDELINES
Convection cooking. The convection cooking mode, with fan and temperatures ranging between 50 - 270°C, is
suitable for cooking first courses, meat dishes, fish, vegetables and cakes.
Different foods with the same cooking directions (temperatures) can be cooked together without flavors getting
mixed. For best results we suggest to keep at least a 3 cm gap between the food in the pan and the next pan
above. This will help the air circulation inside the oven and keep the temperature homogeneous at all levels.
To choose the best cooking temperature follow this simple rule: select a temperature that is about 20% below the
one normally used in static ovens or that you find on food direction and decrease the cooking time by the same
percentage. The forced ventilation system of convection guarantees shorter cooking times because the air
circulation accelerates the increase of temperature inside the food.
Please be careful to always follows these useful tips.
Combined convection cooking. The combined convection cooking, also called mixed (not to be confused with
steaming in which the cooking is made using only steam at max temperature of 100°C) increases the level of
humidity inside the oven during the convection cooking. This will keep food that usually is cooked at high
temperatures more moist. In this way the food stays tender and loses very little weight. It is particularly suitable
for roasting, broiling meat, stews and large pieces of meat for which we always advise to use the core probe
(optional for gastronomy smart plus+ version).
COOKING TIPS FOR YOUR RECIPES
For best results, we recommend that you always use the right cooking pan size. You can follow a simple rule for
choosing the pan: food shouldn’t exceed the level of the pan edge. For roasting meat, you can use the grid directly
with a drip pan on the level below or special pans for roasting and grilling.
First courses dishes: Lasagna, cannelloni and crepes can be prepared using the convection cooking mode. We
suggest to set the temperature at 170°C for about 15 minutes and then raise it to 200°C for about 5 minutes for
browning.
Roasting/broiling meat: Roast beef, Roast veal, Pork round, Leg of Lamb, etc can be prepared using the
combined cooking mode. You can put the meat directly on a grid and place a drip pan or tray on the level below
to collect the juices. We always suggest to use a core probe for roasting large pieces of meat but in case you don’t
have this possibility set the temperature between 170°C and 190°C and roast for about 90 minutes setting the
steam timer.

Baking meat, fish and poultry: Use an appropriate size cooking pan depending on food size. For baking fish use
a low temperature between 120-140° C for about 12-15 minutes with the maximum humidity level. Sliced meat
can be baked quickly at a temperature of 200-220°C for about 10-15 minutes. Poultry requires a temperature of
180-200°C; cooking time depends on food size. Use steam for turkey, duck and large poultry that need longer
baking times than chicken. With this cooking method you will need very little condiment; just grease and flavor the
food before putting it in the oven.
Baking cakes and pastries: for best results we suggest the use of aluminum cooking pans; 40mm (height) for
yeasted products and 20mm (height) for other products or shaped pans for baguettes. Set the temperature
between 170-180°C and cook for about 15 minutes. Usually steam is not necessary because the dough is already
moist. Just steam for few seconds at the end of cooking to brown.

CLEANING
1. Cleaning operation should be done at the end of every working day. This will prevent corrosion of stainless
steel surface and will extend your oven life.
2. Before starting any cleaning operation be sure that the oven has cooled and is switched off.
3. Remove all detachable items such as side racks, fan cover and clean them separately with specific detergent for
stainless steel surfaces.
4. Remove any food remains from internal surfaces of the oven and fan wheel. NEVER USE SCRAPERS, KNIVES
OR WIRE BRUSHES OR ANY KIND OF ABRASIVE PRODUCTS ON STAINLESS STEEL SURFACES.
5. Wipe the interior metal surfaces of the oven with a soft cloth or paper towel to remove any remaining food.
6. Use water and a cloth to clean the internal surfaces and if needed only specific detergent for stainless steel
surfaces.
7. If your oven is equipped with a water shower NEVER spray directly on hot surfaces especially oven door glass
and lamps.
8. Remove door gasket from its position and clean it with a soft cloth and neutral detergent.
9. Leave door open until interior is completely dry.
10. Reinstall cover fan, side racks and shelves.

MAINTENANCE
Replacing a light bulb:
1 - Carefully remove glass lamp cover (as shown on picture);
2 - Unscrew broken light bulb and replace with a new one (as shown on picture);
3 Place glass cover back on; position cover with cut out edge on bulb side;
Replacing or removing door gasket:
1 Carefully pull out door gasket from its groove (as shown on picture);
Adjusting the water flow for steaming (only for gastronomy ovens):
1 Turn the screw clockwise for decreasing the water flow for steaming;
2 Turn the screw anticlockwise for increasing the water flow for steaming;
