SAFETY PRECAUTIONS
To ensure safe operation, read the following statements and understand
their meaning. This manual contains safety precautions which are
explained below. Please read carefully.
Warning is used to indicate the presence of a hazard that will or can
cause severe personal injury or death.
Caution is used to indicate the presence of a hazard that will or can
cause minor or major personal injury if the caution is ignored.
NOTICE: Notice is used to note information that is important but not
hazard-related.
To reduce risk of injury or damage to the equipment
This equipment must be installed by a qualified person.
Use only grounded electrical outlets matching the nameplate rated
voltage.
NOTICE: Do NOT modify the cord or plug on the drop-in. Modifying
any component may damage the drop-in or cause injury,
and will void the warranty. See the specification sheet on
Vollrath.com for electrical specifications
Do not use an extension cord with this equipment. Do not plug this
equipment into a power strip or multi-outlet power cord.
The equipment should only be used in a flat, level position.
Keep equipment and power cord away from open flames, electric
burners or excessive heat.
Do not operate the equipment if it is damaged or is malfunctioning.
Do not operate unattended.
FUNCTION AND PURPOSE
This equipment is intended to hold containers of pre-chilled cold food
at the proper serving temperature. It is not intended to chill food. Food
must be prepared and at proper serving temperature when place into
the equipment. For best performance, stainless steel containers are
recommended. This equipment is not intended for household, industrial
or laboratory use.
This equipment is intended for use in an ambient temperature below
86 °F (30 °C). Using the equipment in warmer temperatures will take
the unit out of NSF compliance. Modifying refrigeration parameters may
void the warranty.

RECORD YOUR SERIAL NUMBER
The serial number for this equipment can be found on the rating plate
located below the well, near the power cord. To aid in future
communication about your product, please record the serial number in
the space below.
FEATURES AND CONTROLS
BEFORE FIRST USE
Before using this equipment it must be cleaned and dried thoroughly.
See the Cleaning section in this manual.
OPERATION
NOTICE: The drop-in operates on the principle of positive fan
pressure developed by the unit cooler fan located in the
well. To ensure the cold air vents discharge the necessary
flow of cold air over the food:
Use all internal well components provided: drop
sides, false bottom, false bottom support brackets
and adapter bar support brackets.
Adapter bars and/or templates must be used to
eliminate air gaps between and around food pans.
The drain valve must be kept closed.
For best performance, prevent drafts and room air
currents from disturbing the curtain of cold air
immediately above the food pans.
Pre-Chill
1. Open the drain valve to allow any water in the well to drain.
2. Close the drain valve.
3. Plug the equipment into a properly grounded electrical outlet that
matches the voltage on the rating plate.
NOTICE: Using a voltage other than the nameplate rated voltage
will cause damage to the unit. Incorrect voltage,
modification to the power cord or electrical components
can damage the unit and will void the warranty.
4. Turn the power switch to the ON position.
Note: This equipment features a bump start, which starts the
compressor in stages to protect the components. When the
equipment is switched ON, the compressor will cycle on and off
three times. After the third cycle the equipment should function as
normal
5. Allow the drop-in to run for approximately 30 minutes.
NOTICE: Do NOT use ice in the well.

WARNING
Electrical Shock Hazard
Keep water and other liquids from entering the inside of the
unit. Do not over fill pans or trays. Liquid could contact the
electrical components and cause a short circuit or an electrical
shock.

OPERATION (CONTINUED)
Hold Chilled Food
1. Place containers of properly chilled food (38°F ((3° C)) or colder
into the pre-chilled unit.
NOTICE: For proper distribution of cold air over the food, the tops
of the food pans/containers must be at least 1" (2.5 cm)
below the top surface of the unit.
NOTICE: Monitor food temperature closely for food safety. The
United States Public Health Service recommends that
cold food be held at a maximum of 41 ºF (5 ºC) to help
prevent bacteria growth.
2. Stir food hourly for best food appearance and temperature
maintenance.
3. When finished using the equipment, switch the power switch to the
OFF position.
4. Remove the food containers.
CLEANING
To maintain the appearance and increase the service life, clean your
equipment daily.
NOTICE: Do not use caustic cleaning chemicals, steel wool or
commercial lime removal products to clean the equipment.
NOTICE: Vollrath recommends cleaning the unit after it has been
turned off for several hours or overnight to allow time for
any frozen condensation to melt.
1. Open the drain valve and drain the water. The valve is in the OPEN
position when the handle of the valve is aligned with the body of the
valve.
2. Remove the two air intake assemblies.
3. Use a flathead screwdriver to loosen the screws on the adapter bar
support brackets. Remove the brackets.
4. Remove the false bottom.
5. Use a flathead screwdriver to loosen the screws securing the drop
sides. Remove the drop sides.
6. Lift and remove the two air mixing boxes.
7. Use a flathead screwdriver to loosen the screws on each false
bottom support bracket. Remove the brackets.
8. Use a damp cloth or sponge dipped in soapy water to clean the
components and the inside of the well.
9. Thoroughly rinse the equipment with water after cleaning.
10.Reassemble the components. Adjust the false bottom support
brackets to contact the bottoms of the drop sides at all 4 corners.
Not doing so will allow cold air leaks which can freeze food to the
pan and reduce cold discharge airflow over the food pans.
11.Close the drain valve. Rotate the valve to the CLOSED position, when
the handle of the valve forms a “T” with the body of the valve.

the well/below the air vents.
Install pans 1" below the top of the well/below the air vents.
High room relative humidity.
Room relative humidity should not exceed 60%, reduce humidity to
the extent possible.
