or static air, distribution of heat sources.
Read this owner's manual through carefully: it was designed to provide you with all the necessary
information to get the best out of your appliance.
It will answer all your questions as to technical terms, cooking modes, accessories, etc.

The accessories
Your oven is provided standard with:
2 trays (1 baking tray and 1 dripping pan) suitable for all types of cooking.
1 sliding grid recommended when cooking on 3 racks and when cooking meat together with
a dripping pan.
1 rotisserie assembly (please see rotisserie cooking on p. 16 and 17).
The sliding grid
Always use the sliding grid with the tabs folded down and together with the dripping pan.
When it is positioned on the 2nd rack from the oven bottom, the grid acts as a meat support,
with the dripping pan placed on the 1st rack from the bottom to catch any dripping fat or
juices.
When it is positioned on the top rack (depending on the size of the foodstuff) for grilled
food, the dripping pan is to be placed on the 1st rack from the oven bottom to catch any
dripping fat or juices.
When it is positioned on the top oven rack, it is ideal for multi-cooking.

Slide the grids in from the back in the following order::
slide grid 2 into grid 1,
place grid 3 into grid 2,
Lift the insert locking tabs on the accessory insert,
slide the whole assembly into your oven,
fold down the tabs to secure the sliding insert on the oven rack.
Your grid is now securely in place and you can take your dish out of the oven (by pulling grid 2
towards you) without having to slide out the whole insert assembly.

First use:
The first time you use your oven, turn it on with nothing in it in a well-aired room.
Use the "fan assisted" cooking mode , set a temperature of 270°C and leave the
oven on for 1 hour.

mode (except for dough proving).

FROM THE

The cooking modes were devised with the help of the Scholtès culinary expert. Our expert is
a professional chef and an integral member of the Scholtès Research and Development team.
The recommended cooking modes, temperatures and oven rack heights reflect our expert's
own experience in the kitchen and will allow you to achieve the very best results.
Recommandations :
When the appliance is in use, it becomes quite hot. Take care not to touch the heating
elements inside the oven.
Do not place any dishes or aluminium foil on the oven bottom: this would damage the
enamel coating irreversibly.

Scholtès ovens use different techniques to produce, circulate and preserve heat.
Your oven has 9 cooking modes to suit different types of dishes. The simple symbols make it
very easy to select the most suitable cooking mode.
Defrosting
Dough proving to help dough rise gently
Pizza/Bread baking for bread, buns and pizzas
Pastry mode for tarts and quiches
Roasting for au gratin dishes, poultry and meat
Rotisserie for roasting on the spit (oven door shut)
Barbecue mode for browning food and au gratin dishes (oven door ajar)
Convection mode for traditional cooking
Fan assisted mode for cooking on more than one rack

Defrosting
Care must be taken when defrosting food so that the outer parts, which are the first to defrost, do
not develop harmful bacteria.
Food is generally defrosted in the refrigerator: this entails a slow defrosting process.
You can halve defrosting times by using this oven setting.
It is ideal for defrosting:
- food to be eaten raw (such as strawberries, for example),
- food to be cooked: chicken will defrost in half the time.
Defrosted food should be eaten soon after defrosting.
Place food to be defrosted on the dripping pan on rack 2.

This mode is very useful for proving dough (made with yeast) before baking. It provides a constant
temperature of 40°C (which cannot be modified) to help bread, buns, brioches and pizza dough
rise...
This particular mode provides the ideal setting for the leavening process of dough.
Place the dough on the baking tray on rack 2.

We recommend you pre-heat the oven.
Bake on the baking tray on rack 2.
This mode is particularly suitable for bread and buns (containing yeast or baking powder). In
fact, it helps prevent the dough from drying and favours rising before the surface becomes gol-
den and crusty: just like in a bakery.
Pizza/Bread baking

This mode is especially recommended for baking tarts, quiches and the like. Pastry bases are baked
to perfection while the filling remains soft and tender.
Use the baking tray on rack 2.
We recommend you pre-heat the oven before placing your dish in it.

Roasting
This cooking mode is particularly suitable for red or white meats, au gratin dishes, etc. We recommend
you use the pre-set temperature for roasts.
Use the dripping pan on rack 1 and place your meat directly onto a grid on rack 2.
It is best to start with a cold oven.

Rotisserie
The rotisserie supplied with your oven consists of:
a support situated on the 3rd oven rack from the oven bottom so the rotisserie fits into the
hollow shaft of the rotisserie motor located at the back of the oven, behind the perforated oven
back panel;
a spit that passes through the roast, which is kept firmly in place on both ends by two adjustable
sliding forks each fastened onto the spit by means of a wing nut.
Warning: when positioning the rotisserie assembly, ensure the spit fits firmly into the hollow
shaft connected to the motor.
Make sure you position the following correctly:
- the spit in the centre of the roast,
- the roast at an equal distance from both ends of the spit.
a removable heatproof handle to screw onto the front of the spit allows you:
to have a rotisserie which is long enough for even the largest of roasts,
to avoid scalding yourself when removing the roast at the end of cooking.
Screw on the handle tightly before removing the spit.
Rotisserie delayed stop device
Scholtès ovens are fitted with a rotisserie delayed stop device. When cooking is done, the
rotisserie motor continues to turn the spit. It only comes to a stop when the temperature inside
the oven has dropped sufficiently, this prevents the surface of the meat from burning.
The rotisserie delayed stop device will only operate if a cooking time has been programmed
(see page 21).

Cleaning the rotisserie and other accessories
The rotisserie can be removed completely thanks to the two wing nuts. The elements comprising
the rotisserie assembly should be cleaned together with the other accessories (hotplate, dripping
pan, grid) in the sink using a damp sponge and ordinary detergent or even in your dishwasher.
When cleaning the enamel surface on the oven door, take care not to lift or remove the special
seal, as this could damage the airtight quality of the oven.

Rotisserie
This cooking mode is especially suited to roasting on the spit with the oven door shut.
The meat rotates slowly, browning evenly until it is cooked all the way through.
Use the dripping pan on rack 1 to catch any cooking juices or fat, and place the rotisserie support
on rack 3.
It is best to start with a cold oven.

Barbecue
Keep young children away from the oven when using the Barbecue mode as some
accessible parts become very hot.
This cooking mode is ideal for cooking beef ribs, for grilling meat and au gratin dishes and the like,
with the oven door ajar (using the notch provided on the door hinge).
It is best to start with a cold oven.
Use the dripping pan on rack 1 to catch any cooking juices or fat. Place the meat on the grid, the rack
height depends on the size of the meat itself.

Fan assisted cooking
This mode is particularly suitable for cooking identical or different dishes on more than one rack.
Even if the dishes vary in nature, their respective flavours are not mingled during cooking.
To use this mode, all dishes must require the same cooking temperature.
We recommend you pre-heat the oven before placing your dish in it.
