Recipes for the Midea Pressure Cooker

Traditional Ratatouille:
Ingredients:
1 ea Red Onion (large dice)
8 ea Garlic Cloves (minced)
½ cup Olive Oil
1 ea Eggplant (cut into 1/2-inch pieces; about 2 cups)
1 ea Zucchini (cut into 1/2-inch pieces; about 1 cup)
1 ea Red Bell Pepper (cut into 1/2-inch pieces; about 1 cup)
1 ea Green Bell Pepper (cut into 1/2-inch pieces; about 1 cup)
3/4 pound Small Ripe Tomatoes (chopped coarse; about 1 1/4 cups)
1 tbsp Dried Oregano
1 tbsp Dried Thyme
1/8 tsp Ground Coriander
2 tbsp Salt
2 oz Lemon Juice
1/2 cup Parsley Leaves
Method:
1. Place all ingredients except parsley in pressure cooker and cook for 20 minutes
2. Taste and adjust seasoning with salt
3. Garnish with chopped parsley
